{"id":35843,"date":"2010-12-06T11:38:57","date_gmt":"2010-12-06T16:38:57","guid":{"rendered":"https:\/\/www.dietsinreview.com\/diet_column\/?p=35843"},"modified":"2010-12-06T11:39:41","modified_gmt":"2010-12-06T16:39:41","slug":"vanilla-biscotti-makes-the-perfect-holiday-treat","status":"publish","type":"post","link":"https:\/\/dietsinreview.com\/diet_column\/12\/vanilla-biscotti-makes-the-perfect-holiday-treat\/","title":{"rendered":"Vanilla Biscotti Makes the Perfect Holiday Treat"},"content":{"rendered":"<p><a title=\"Vanilla Biscotti Makes the Perfect Holiday Treat\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/12\/vanilla-biscotti-makes-the-perfect-holiday-treat\/\" target=\"_self\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-36806 alignright\" title=\"Biscottini\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2010\/12\/biscotti.jpg\" alt=\"\" width=\"200\" height=\"289\" \/><\/a>With the holidays here, you&#8217;re probably wondering how you&#8217;ll manage to stay true to your healthy diet while indulging in some of your favorite seasonal eats.<\/p>\n<p>Instead of depriving yourself, bake up some alternative sweet treats, such as <a title=\"biscotti recipe\" href=\"https:\/\/www.dietsinreview.com\/recipes\/biscotti\/\" target=\"_self\">biscotti<\/a>: a dry, twice-baked cookie that is designed for dunking into coffee &#8212; or if you&#8217;re feeling adventurous, your favorite wine or bubbly.<\/p>\n<p><strong>Simple Vanilla Biscotti<\/strong><\/p>\n<p>Makes 24 biscotti<\/p>\n<p>Ingredients:<\/p>\n<p><!--more--><\/p>\n<ul>\n<li>6 tablespoons (3 ounces) butter<\/li>\n<\/ul>\n<ul>\n<li> 2\/3 cup (4 3\/4 ounces) sugar<\/li>\n<\/ul>\n<ul>\n<li> 1\/4 teaspoon salt<\/li>\n<\/ul>\n<ul>\n<li> 1 to 2 teaspoons vanilla extract<\/li>\n<\/ul>\n<ul>\n<li> 1 1\/2 teaspoons baking powder<\/li>\n<\/ul>\n<ul>\n<li> 2 large <a title=\"are eggs healthy?\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/02\/confused-about-how-healthy-eggs-are\/\" target=\"_self\">eggs<\/a><\/li>\n<\/ul>\n<ul>\n<li> 2 cups (8 1\/2 ounces) flour (try <a title=\"Whole Grain Diet\" href=\"https:\/\/www.dietsinreview.com\/diets\/Whole_Grain_Diet\/\" target=\"_self\">whole wheat flour<\/a> for an even healthier treat)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>1. Preheat the oven to 350\u00b0F. Lightly grease (or line with parchment) one large (about 18\u2033 x 13\u2033) baking sheet.<\/p>\n<p>2. In a medium-sized bowl, beat the butter, sugar, salt, vanilla, and baking powder until the mixture is smooth and creamy. Beat in the eggs; the batter may look slightly curdled. At low speed on your mixer, add the flour, stirring until smooth; the dough will be sticky.<\/p>\n<p>3. Plop the dough onto the prepared baking sheet. Shape it into a log that\u2019s about 14\u2033 long x 2 \u00bd\u201d wide x \u00be\u201d thick. Straighten the log, and smooth its top and sides; a wet spatula or wet bowl scraper works well here. Note: For extra-long, bistro-style biscotti, pat the dough into a lightly greased 12\u2033 x 5 1\/2\u2033 biscotti pan.<\/p>\n<p>4. Bake the dough for 25 minutes. Remove it from the oven, and allow it to cool on the pan anywhere from 10 to 25 minutes; just work it into the schedule of whatever else you\u2019re doing in the kitchen. Using a spray bottle filled with room-temperature water, lightly but thoroughly spritz the log, making sure to cover the sides as well as the top. Softening the crust just this little bit will make slicing the biscotti much easier.<\/p>\n<p>5. Reduce the oven temperature to 325\u00b0F. Wait another 5 minutes, then use a serrated knife to cut the log crosswise into 1\u20442\u2033 to 3\u20444\u2033 slices. Or cut the biscotti on the diagonal\u2014for fewer, longer biscotti. As you\u2019re slicing, be sure to cut straight up and down, perpendicular to the pan; if you cut unevenly, biscotti may be thicker at the top than the bottom, and they\u2019ll topple over during their second bake.<\/p>\n<p>6. Set the biscotti on edge on the prepared baking sheet. Return the biscotti to the oven, and bake them for 25 to 30 minutes, till they feel very dry and are beginning to turn golden. They\u2019ll still feel a tiny bit moist in the very center, if you break off a piece; but they\u2019ll continue to dry out as they cool.
