(Wiley, 2026), packs in lots of delicious RED foods\u2014<strong><a title=\"tomato pill\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/06\/tomato-pill-for-heart-health\/\" target=\"_self\">tomatoes<\/a><\/strong> (rich in vitamins and minerals including vitamin C, vitamin A, vitamin K, and potassium and a good source of lycopene when cooked), red bell peppers (loaded with vitamin C and vitamin A, and also a good source of vitamin B6, fiber and other nutrients), and jalapeno peppers (rich in vitamin C and a good source of vitamin A and fiber). It also combines protein (from sirloin) with complex carbohydrates and fiber (from beans) to fill you up and provide long-lasting energy.<br \/>\nAn added bonus? It\u2019s a hearty and delicious meal the whole family will enjoy!<\/p>\n<p><!--more--><\/p>\n<p><strong>One-Pot Vegetable Beef Chili<\/strong><\/p>\n<p>This dish is so tasty and a great way to sneak some extra fiber into a meal.<\/p>\n<p><em>Makes 8 servings<\/em><\/p>\n<p><em>Total preparation and cook time: 4 hours and 15 minutes<\/em><\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>2 15 \u00bd- ounce cans kidney beans<\/li>\n<\/ul>\n<ul>\n<li>1 15 \u00bd -ounce can black beans (low sodium)<\/li>\n<\/ul>\n<ul>\n<li>6 ounces ground sirloin<\/li>\n<\/ul>\n<ul>\n<li>1 28-ounce can crushed tomatoes<\/li>\n<\/ul>\n<ul>\n<li>\u00bc cup tomato paste<\/li>\n<\/ul>\n<ul>\n<li>\u00bd package (6 ounces) soy crumbles<\/li>\n<\/ul>\n<ul>\n<li>2 cloves minced garlic<\/li>\n<\/ul>\n<ul>\n<li>1 cup corn kernels<\/li>\n<\/ul>\n<ul>\n<li>1 cup chopped red bell pepper<\/li>\n<\/ul>\n<ul>\n<li>1 tablespoon jalapeno pepper, finely chopped<\/li>\n<\/ul>\n<ul>\n<li>1 1 \u00bc -ounce package low-sodium chili seasoning mix<\/li>\n<\/ul>\n<ul>\n<li>\u00bd cup chopped cilantro<\/li>\n<\/ul>\n<p>Place all ingredients in a 4-quart slow cooker. Stir a few times to make sure all the ingredients are combined.
