But no pep talk has ever been as compelling as my recent chat with <strong><a title=\"joel robuchon\" href=\"http:\/\/www.foodandwine.com\/chefs\/joel-robuchon\" target=\"_blank\">Jo\u00ebl Robuchon<\/a><\/strong>, the world&#8217;s most <strong><a title=\"michelin chefs\" href=\"http:\/\/www.foodandwine.com\/slideshows\/european-michelin-chefs\/7\" target=\"_blank\">Michelin-starred chef<\/a><\/strong>. At his L&#8217;Atelier in Manhattan, he spoke passionately about his commitment to healthy eating\u2014touting his favorite ingredients (&#8220;One should eat <strong><a title=\"cumin\" href=\"http:\/\/www.foodandwine.com\/slideshows\/minimalist-cooks-kitchen-equipment-and-ingredient-staples\/2\">cumin<\/a><\/strong> every day!&#8221;) and championing the scientists who advise him (&#8220;We the chefs have a responsibility to learn about the chemical makeup of food!&#8221;).<!--more--><\/p>\n<p>Today he eliminates as much butter, oil and salt from his new dishes as possible. &#8220;I developed so many healthy recipes over two months that I lost 22 pounds,&#8221; Robuchon boasts.
