Or, try the Warm Winter Salad, Roasted Pecan Salmon, and Sauteed Pear Sundaes recipes posted here.<\/p>\n<p><strong><em>Lover\u2019s<\/em> Warm Winter Salad<\/strong><\/p>\n<p><strong><\/strong><\/p>\n<ul>\n<li>8 ounces boneless, skinless chicken breast, trimmed of fat<\/li>\n<li>1 tablespoon extra-virgin olive oil<\/li>\n<li>1 pear, sliced<\/li>\n<li>1 small shallot, minced<\/li>\n<li>3 tablespoons sherry vinegar<!--more--><\/li>\n<li>\n<div id=\"attachment_5379\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"https:\/\/www.dietsinreview.com\/recipes\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5379\" class=\"size-medium wp-image-5379\" title=\"warm-winter-salad\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2009\/02\/warm-winter-salad.jpg\" alt=\"Warm Winter Salad recipe from EatingWell Magazine.\" width=\"300\" height=\"300\" \/><\/a><p id=\"caption-attachment-5379\" class=\"wp-caption-text\">Warm Winter Salad recipe from EatingWell Magazine.<\/p><\/div>\n<p>2 teaspoons Dijon mustard<\/li>\n<li>1 small head radicchio, thinly sliced<\/li>\n<li>1 small fennel bulb, cored and thinly sliced<\/li>\n<li>1 large carrot, cut into matchsticks<\/li>\n<li>1 tablespoon chopped walnuts, toasted (see Tip)<\/li>\n<li>1\/8 teaspoon salt, or to taste<\/li>\n<li>1\/8 teaspoon freshly ground pepper, or to taste<\/li>\n<li>6 large butter lettuce leaves<\/li>\n<li>1\/4 cup crumbled Gorgonzola or goat cheese<\/li>\n<\/ul>\n<ol>\n<li>Poach chicken. Use 2 forks to shred into bite-size pieces.<\/li>\n<li>Heat oil in a large nonstick skillet over medium-high heat. Add pears and cook, stirring occasionally, until they start to brown, about 2 minutes. Transfer to a small bowl.<\/li>\n<li>Whisk shallot, vinegar and mustard in a small bowl; add to the pan and cook, stirring constantly, for 30 seconds. Add the cooked chicken, radicchio, fennel, carrot and walnuts. Cook, stirring occasionally, until just wilted, about 3 minutes. Return the pears to the pan. Season with salt and pepper.<\/li>\n<li>Divide lettuce leaves between 2 plates. Top with the warm chicken salad and sprinkle with cheese. Serve alone or with whole-grain baguette or rolls.<\/li>\n<\/ol>\n<p><strong><em>Romantic <\/em>Roasted Pecan Salmon Delight<\/strong><\/p>\n<p><strong><\/strong><\/p>\n<ul>\n<li>4 salmon filets (4-6 oz. each)<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>1 tablespoon Dijon mustard<\/li>\n<li>1 tablespoon honey<\/li>\n<li>2 tablespoons seasoned breadcrumbs<\/li>\n<li>2 tablespoons chopped pecans<\/li>\n<li>1 teaspoon parsley<\/li>\n<li>Wedges of fresh lemon<\/li>\n<\/ul>\n<ol>\n<li>Sprinkle salmon with salt and pepper.<\/li>\n<li>Place skin side down on baking sheet.<\/li>\n<li>Combine mustard and honey, brush on top of salmon.<\/li>\n<li>Mix topping of breadcrumbs, nuts, and parsley and sprinkle over salmon.<\/li>\n<li>Bake at 400 degrees 10-15 minutes or until flaky.
