Simple: Bake up a batch or two of these delectable <em>and<\/em> healthy double chocolate peppermint donuts to tide everyone over &#8217;til lunch. Two things you should know about me are that 1) I absolutely adore <strong><a title=\"bakers dozen cookbook and baked doughnuts\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/10\/announcing-bakers-dozen-our-first-ecookbook-with-13-healthier-breakfast-and-brunch-recipes\/\">donuts<\/a><\/strong>, and 2) there&#8217;s nothing I crave more during the holidays than all-things chocolate and <strong><a title=\"peppermint health benefits\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/01\/peppermint-comes-with-sweet-health-benefits\/\">peppermint<\/a><\/strong>. And the peppermint dusting on top made them absolutely irresistible. Of course, if any of your guests don&#8217;t care for mint simply leave off the candy cane or opt for another &#8220;glaze&#8221; option such as melted\u00a0<strong><a title=\"chocolate peanut butter fudge\" href=\"https:\/\/www.dietsinreview.com\/recipes\/chocolate-peanut-butter-fudge\/\">peanut butter<\/a><\/strong>, powdered sugar or just plain. One donut down and I quickly realized how dangerous it was to have these sitting around my apartment, so I ran them down to my landlord and maintenance staff to share. A girl has to practice self control somehow, even if it&#8217;s shuffling off her baked goods on unsuspecting neighbors.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.dietsinreview.com\/diet_column\/12\/double-chocolate-peppermint-donuts-make-christmas-morning-sweet\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-82704\" title=\"Baked Chocolate Peppermint Donuts\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2012\/12\/Baked-Chocolate-Peppermint-Donuts.jpg\" alt=\"\" width=\"600\" height=\"600\" srcset=\"https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2012\/12\/Baked-Chocolate-Peppermint-Donuts.jpg 600w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2012\/12\/Baked-Chocolate-Peppermint-Donuts-150x150.jpg 150w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2012\/12\/Baked-Chocolate-Peppermint-Donuts-300x300.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p><strong><a title=\"baked double chocolate peppermint donuts\" href=\"https:\/\/www.dietsinreview.com\/recipes\/baked-double-chocolate-peppermint-donuts\/\">Baked Double Chocolate Peppermint Donuts<\/a><br \/>\n<\/strong><em>yields ~8 donuts\u00a0<\/em><\/p>\n<p>Ingredients:<br \/>\n1 cup whole wheat pastry flour (or sub all unbleached all purpose)*<br \/>\n1\/4 cup dark chocolate cocoa powder (or sub reg. cocoa powder)<br \/>\n1\/4 cup honey<br \/>\n1 tsp. baking powder<br \/>\nPinch salt<br \/>\n1\/4 tsp. cinnamon<br \/>\n1 egg<br \/>\n1 cup low-fat buttermilk, well shaken<br \/>\n1 Tbsp. canola oil<br \/>\n1\/2 tsp. vanilla extract<br \/>\n2 peppermint candy canes, crushed<br \/>\n1\/3 cup mini bittersweet or semisweet chocolate chips<\/p>\n<p>Method |\u00a0Preheat the oven to 400 degrees F.\u00a0Combine the dry ingredients together in a large bowl. In a separate bowl, combine the wet ingredients, whisking until well combined. Then, slowly fold the wet ingredients into the dry, adding more buttermilk if the batter is a little thick. Lightly coat a donut pan with nonstick cooking spray and then sprinkle in a small amount of the mini chocolate chips. Carefully spoon in batter and bake for 10-12 minutes or until a toothpick inserted comes out clean.\u00a0After a few minutes rest remove the donuts from the pan &#8211; they should pop right out. Invert and top with a sprinkle of finely crushed candy canes, which should stick right to the mini chocolate chips. Serve immediately. These would make a lovely addition to coffee, hot cocoa or hot tea on a chilly winter morning.<\/p>\n<p>Note:\u00a0*<em>Whole wheat pastry flour has all of the nutritional benefits of regular whole wheat flour but is processed to be lighter in texture, making it exceptional for use in healthy baked goods. You could use regular whole wheat flour in this recipe but it will yield a slightly more dense, hearty donut.
