Holly has always approached food practically and healthfully, avoiding any fad diet trends or overly-complicated ingredients or equipment. That’s why I’ve always loved her blog: Healthy, simple food inspiration can always be found. Apple cheddar tart, anyone? Plus, she’s one of the most entertaining online writers you’ll read.

I had the extreme pleasure of speaking with Holly recently about her blog, her life and her practical approach to health. Here’s what she had to say.

How did you start your food blog?
The Healthy Everythingtarian started in 2026 as of result of having one of the most boring jobs in the world. I had just graduated college at the peak of the recession and needed a paying job, which resulted in me working at an accounting office scanning papers all day. It was the worst. However, you actually have a lot of downtime while your 1,000+ pages are being scanned, and that’s when I discovered food blogs. Within months, I made the decision to start my own to combine my love of food with my background in writing and journalism. Nearly four years later, the rest is history!

How would you describe your approach to eating and health?
As my blog suggests, I eat everything! On a day-to-day basis, I eat a mostly vegetarian diet while making sure there is always enough room in my diet for both kale salads and spinach smoothies as well as ice cream, nachos and beer.

Have you always had an interest in healthy food or did it come later in life?
I have always loved food – both the healthy and non-healthy varieties. Once I graduated college, I realized that if I didn’t watch what I ate and move a bit more those office pounds were going to pile on quickly. That’s probably when I became more serious about changing my daily habits to ensure I was living the healthiest way possible. Because eating healthy and exercising is exactly that: A lifestyle.

What is your favorite food/ingredient to use in the kitchen?
On any given week you can sneak into my kitchen and always find these five things: Kale, eggs, almond milk, sparkling water and an obnoxiously big bottle of Frank’s Red Hot sauce.

Has blogging changed the way you view food and cooking?
Blogging has both made me much more relaxed about food and yet, more serious about food at the same time. I’m like any other person who gets home from work at 6 p.m. and the last thing I want to do is cook. On those nights, veggie egg scrambles are a lifesaver. However, blogging has also helped me discover that there are few things I enjoy more in this world than feeding someone a meal they love. To me, that’s serious business and what it is all about.

Favorite recipe to date?
Eep! Favorite recipe – however could I choose? If I have to pick, I’ll go with my Kale Salad with Avocado, Cherries and Pecans, mostly because I make it (or some version of it) literally once a week.

What three recipes would you like to share with our readers?

Banana Custard Oatmeal

Easy Avocado Dressing

{Accidentally} Perfect Vegan Cookies

Holly is the 11th in a series of spotlights on healthy food bloggers.
