Kelsey and her husband treat Happyolks as a collaborative project, where he takes the photographs and she develops the recipes and shares some of the most beautiful stories you&#8217;ll read. We had the extreme pleasure of speaking with Kelsey recently about her blog and her approach to health. Here&#8217;s what she had to say.\u00a0<!--more--><\/p>\n<p><strong>Why did you start your food blog?<br \/>\n<\/strong>I talk at length about how Happyolks was born <strong><a href=\"http:\/\/www.happyolks.com\/faq\/\" target=\"_blank\" rel=\"nofollow\">here<\/a><\/strong>, but essentially it is the product of my\u00a0constant call to experiment with writing, seek human connection, and create recipes that nurture both tummy and soul.<\/p>\n<p><strong>How would you describe your approach to eating\/health?<br \/>\n<\/strong>Kindness. That&#8217;s my approach. I like to think of my body as a sacred vessel that allows me to live out my best life.\u00a0It works so hard for me every day whether I&#8217;m on the job, out for a run at the park near our house, or trekking through the Patagonian Andes. I fuel with plants and proteins and minerals as a way to pay gratitude for all it allows me to do, and keep it strong for years to come.<\/p>\n<p><strong>Have you always had an interest in healthy food or did it come later in life?<br \/>\n<\/strong>My mom was pretty vigilant growing up about keeping junk out of the house. She was into <strong><a title=\"organic foods\" href=\"https:\/\/www.dietsinreview.com\/organic\">organic foods<\/a><\/strong>, nutrient rich diets, and natural medicine before it was in vogue. I didn&#8217;t know what an <strong><a title=\"oreo\" href=\"https:\/\/www.dietsinreview.com\/oreo\">Oreo<\/a><\/strong> was until I had a playdate with a girlfriend in the third grade. Of course, this was rough on a 8 year old and I formed feelings of resentment toward the co-op where we got non-dairy ice cream, etc. Mom certainly got me started on the right foot, and as I moved out on my own and began researching and developing my own ideas around health and fitness, the lifestyle became exponentially more sacred.<\/p>\n<p><strong>What is your favorite (or a few of your favorites) food\/ingredient to use in the kitchen?<\/strong><br \/>\nLemons, harissa spice, good quality olive oils.<\/p>\n<p><strong>Has blogging changed the way you view food and cooking?
