I genuinely enjoy cooking for my family; it&#8217;s not a task to me. That doesn&#8217;t mean I&#8217;m not busy and I don&#8217;t have to find ways to save myself time, but I&#8217;ve made the type and quality of food we eat a priority, so that means I cut corners in other ways.<\/p>\n<p>The <strong><a title=\"dutch oven roasted chicken\" href=\"https:\/\/www.dietsinreview.com\/recipes\/simple-apple-and-herb-dutch-oven-roasted-chicken\/\">Dutch Oven roasted chicken<\/a><\/strong> is my &#8220;microwave dinner,&#8221; if you will. I can give up less than two hours (often on a weekend) to roasting this bird and have more than just one meal. This thing is singing with flavor with plenty of juices to make you forget that whole <strong><a title=\"dark meat vs white meat\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/11\/food-fight-white-turkey-meat-versus-dark-turkey-meat\/\">white meat vs. dark meat debate<\/a><\/strong>.<\/p>\n<p>And forget asking for seconds. No one can have them because I&#8217;m making a second dinner with this chicken.<\/p>\n<p>The trick is to all that flavor and juice is to stuff this chicken full of flavor agents, things that offer plenty of good flavor without jamming it up with salts and fats. Fresh herbs, oranges, apples, garlic, onions, and whole peppercorns are my go-to flavor agents. These give the chicken a subtle flavor that makes it delicious enough to eat on its own, or save to use in other meals throughout the week.<!--more--><\/p>\n<p><a title=\"herbs citrus \" href=\"https:\/\/www.dietsinreview.com\/diet_column\/11\/simple-apple-and-herb-dutch-oven-roasted-chicken-makes-healthy-dinner-for-days\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-93391\" alt=\"herbs and citrus\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2013\/11\/herbs-and-citrus.jpg\" width=\"600\" height=\"812\" srcset=\"https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2013\/11\/herbs-and-citrus.jpg 600w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2013\/11\/herbs-and-citrus-221x300.jpg 221w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>I add more flavor by coating the skin in a mixture of orange zest, olive oil, and honey, rubbing it under the skin as well as across the top. The fruit, herbs, and other ingredients are stuffed inside the chicken as well as under the skin on the outside. It takes one hour. ONE! HOUR! In the world of roasting chickens, that&#8217;s nothing, especially when you consider how much time it takes in a Crock Pot. That&#8217;s <em>first meal; <\/em>the night I prepare the chicken and vegetables, that&#8217;s what we have for dinner. It&#8217;s <strong><a title=\"grilled pork tenderloin and mashed sweet potatoes\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/11\/balsamic-and-rosemary-grilled-pork-tenderloin-and-honey-thyme-mashed-sweet-potato-will-happily-feed-a-crowd\/\">a classic meat and potatoes meal<\/a><\/strong>; comfort food that I&#8217;m comfortable serving.<\/p>\n<p><strong><a title=\"dutch oven roasted chicken\" href=\"https:\/\/www.dietsinreview.com\/recipes\/simple-apple-and-herb-dutch-oven-roasted-chicken\/\">Simple Apple and Herb Dutch Oven Roasted Chicken<img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-93395 alignright\" alt=\"roasted chicken dutch oven\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2013\/11\/roasted-chicken-dutch-oven.jpg\" width=\"400\" height=\"600\" srcset=\"https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2013\/11\/roasted-chicken-dutch-oven.jpg 400w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2013\/11\/roasted-chicken-dutch-oven-200x300.jpg 200w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><\/strong><br \/>\n<em>serves 10; 491 calories including the vegetables<\/em><\/p>\n<p>4 lb. whole chicken<br \/>\n1 apple<br \/>\nfew sprigs each of rosemary, sage, thyme<br \/>\n1 orange, zested<br \/>\n1 lemon<br \/>\n3 garlic cloves<br \/>\n1 Tbsp. olive oil<br \/>\n1 Tbsp. honey<br \/>\n1\/2 yellow onion<br \/>\n6 carrots, peeled and chopped in one-inch segments<br \/>\n6 red potatoes, halved or quartered<\/p>\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n<p>1. Zest the orange and combine with honey and olive oil. Set aside.<\/p>\n<p>2. Heat a Dutch Oven on the stove top at medium-high heat, and preheat the oven to 450 degrees F.<\/p>\n<p>3. Stuff the chicken with slices or chunks of the apple, lemon, orange, herbs, garlic, and onion, putting some inside the cavity of the chicken as well as under the skin on the outside. Tie the legs closed with twine.<\/p>\n<p>4. Pour the orange mixture over the chicken rubbing under the skin and all around the outside.<\/p>\n<p>5. Add a drizzle of olive oil and some of the onion and garlic to the Dutch Oven. Then, place the chicken inside to sear.<\/p>\n<p>6. Add the chopped potatoes and carrots, extra herbs, apples, and onions all around the outside of the chicken. I pull the remaining Dutch Oven roasted chicken and save it for other meals. That&#8217;s right &#8211; cook once, and have one or two more dinners ready to go during the week. It makes things so much simpler.
