I agreed to make it and put it on the weekly meal plan &#8211; I wanted to <em>reward <\/em>him, if you will,\u00a0<em><\/em>for being involved in the decision! But also, the simple ingredients showed promise of being a really easy dinner that tasted great.<\/p>\n<p>Winner winner Asian-inspired chicken dinner&#8230; this has become a go-to staple in our house!<!--more--><\/p>\n<p><a title=\"steamed vegetables, stir fry\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/01\/sticky-red-wine-chicken-and-veggies-stir-fry-is-way-better-than-carryout\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-95111\" alt=\"chicken veg stirfry\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/chicken-veg-stirfry.jpg\" width=\"600\" height=\"450\" srcset=\"https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/chicken-veg-stirfry.jpg 600w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/chicken-veg-stirfry-300x225.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Katie at GoodLifeEats.com got us started, and I&#8217;m so glad she did! But as I do with just about any recipe I find (when I&#8217;m not just cooking on the fly), I&#8217;ve got to make it my own.<\/p>\n<p>The carrots and asparagus stay! I expanded the rainbow and added an extra serving of vegetables with thin slices of crisp red bell pepper.<\/p>\n<p><a title=\"chopped vegetables\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/01\/sticky-red-wine-chicken-and-veggies-stir-fry-is-way-better-than-carryout\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-95112\" alt=\"vegetables\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/vegetables.jpg\" width=\"600\" height=\"449\" srcset=\"https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/vegetables.jpg 600w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/vegetables-300x224.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>We keep the garlic, but swap the dried ginger for fresh. Seriously &#8211; I can&#8217;t even put in to mortal words how much I enjoy fresh ginger. The sweet almost citrus smell, the delicate yellow color, the way it makes any food just pop with freshness. I even like grating it. I did marry a ginger, so maybe I&#8217;m bias!<\/p>\n<p><a title=\"ginger and red wine\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/01\/sticky-red-wine-chicken-and-veggies-stir-fry-is-way-better-than-carryout\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-95110\" alt=\"ginger and red wine\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/ginger-and-red-wine.jpg\" width=\"600\" height=\"449\" srcset=\"https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/ginger-and-red-wine.jpg 600w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/ginger-and-red-wine-300x224.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>I use red wine in place of cooking sherry or broth. There&#8217;s usually the bottom of a bottle waiting to be used and it adds more big flavor to this dish. I also tend to skip the soy sauce when preparing this for my family; it reduces the sodium (40mg per serving without the soy sauce; 716mg per serving with) and they can add it on the side if they like.<\/p>\n<p><strong>Now, here&#8217;s where the serious time saving comes in<\/strong>:<\/p>\n<p><a title=\"stir fry and rice\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/01\/sticky-red-wine-chicken-and-veggies-stir-fry-is-way-better-than-carryout\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-95109\" alt=\"rice and chicken\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/rice-and-chicken.jpg\" width=\"600\" height=\"450\" srcset=\"https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/rice-and-chicken.jpg 600w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/rice-and-chicken-300x225.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p><strong>First &#8211; the rice<\/strong>. Mine never turns out, and I feel like it adds another 30-40 minutes to the cooking process. But when I stumbled on these little <strong><a href=\"http:\/\/www.veetee.com\/discover-our-brands\/veetee-dine-in\/\" target=\"_blank\" rel=\"nofollow\">Veetee Dine-In packages of rice<\/a><\/strong> at my grocery store, I stocked up! I buy the basmati over jasmine because it offers three grams of fiber instead of just one. Just peel open and serve. Talk about a time saver!<\/p>\n<p><strong>Second &#8211; the chicken<\/strong>. I&#8217;ve made this with raw chicken, which I cook in coconut oil first, and flavor-wise it&#8217;s fine, but it adds to the prep time. My preferred method on the chicken is to <strong><a title=\"dutch oven roasted chicken and vegetables\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/11\/simple-apple-and-herb-dutch-oven-roasted-chicken-makes-healthy-dinner-for-days\/\">make a roasted chicken<\/a> <\/strong>over the weekend and save a cup of dark and white meat aside for this recipe. A rotisserie chicken from the grocery is the fastest approach and works just as well, too!<\/p>\n<p><a title=\"honey and red wine\" href=\"https:\/\/www.dietsinreview.com\/diet_column\/01\/sticky-red-wine-chicken-and-veggies-stir-fry-is-way-better-than-carryout\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-95102\" alt=\"honey and red wine\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/honey-and-red-wine.jpg\" width=\"600\" height=\"400\" srcset=\"https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/honey-and-red-wine.jpg 600w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/honey-and-red-wine-300x200.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>I love the addition of honey in this recipe, it&#8217;s the closer that makes the dish sticky and sweet.<\/p>\n<p>With a few time savers like the rice and chicken, and the ability to carry over some ingredients from other meals on your weekly plan, there&#8217;s really no excuse for actual carry-out when you can have this served in about 20-30 minutes!<\/p>\n<p><strong><a title=\"low sodium stir fry recipe\" href=\"https:\/\/www.dietsinreview.com\/recipes\/sticky-red-wine-chicken-and-veggies-stir-fry\/\">Sticky Red Wine Chicken and Veggies Stir Fry<img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-95104 alignright\" alt=\"stirfry chicken veg\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/stirfry-chicken-veg.jpg\" width=\"400\" height=\"600\" srcset=\"https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/stirfry-chicken-veg.jpg 400w, https:\/\/dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/01\/stirfry-chicken-veg-200x300.jpg 200w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><\/strong><br \/>\n<em>serves 4; 372 calories<\/em><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>1 cup chicken, chopped in bite-sized pieces<br \/>\n10 spears asparagus, chopped<br \/>\n1 large carrot, sliced in thin coins<br \/>\n1 red bell pepper, thinly sliced<br \/>\n3 cloves garlic, minced<br \/>\n1 Tbsp. coconut oil<br \/>\n3 Tbsp. soy sauce &#8211; optional<br \/>\n1\/3 cup red wine<br \/>\n1\/4 cup honey<br \/>\n1\/2 Tbsp. fresh ginger, grated<br \/>\n1 Tbsp. cornstarch<br \/>\n1 cup cooked rice<\/p>\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n<p>1. Bring a steam pot to boil while you wash and prepare the asparagus, carrots, and peppers. Let these steam about 5 minutes then strain and rinse with ice cold water. Set aside.<\/p>\n<p>2. Prepare the sauce with red wine, honey, ginger, and cornstarch (soy sauce if you\u2019re using). Whisk together until well combined and set aside.<\/p>\n<p>3. In a wok, large saut\u00e9 pan, or Dutch Oven, warm the coconut oil on medium high heat. Add the minced garlic and saut\u00e9 for about a minute, but not so long that it burns. Add the chicken (which should already be cooked), and then the vegetables. Let this cook for a minute or two before adding the sauce. Finally, add the cooked rice and fold the ingredients together.<\/p>\n<p>4.
