If so, you\u2019ll inevitably wind up in the quaint neighborhood of Georgetown, which is also a bustling shopping mecca. My favorite place to have a bite is<strong> <a href=\"http:\/\/www.kafeleopolds.com\/\" target=\"_blank\">Kafe Leopold<\/a><\/strong>, a hidden oasis removed from the noise and crowds. The cuisine is loosely Austrian, and it happens to have some of the best salads in D.C. (Although, if you\u2019re in a more decadent mood, the sausage, sauerkraut and spicy mustard is wonderful, as are the pastries).<\/p>\n<p>I\u2019d always loved Leopold\u2019s Watermelon, <strong><a href=\"http:\/\/www.thebestlife.com\/article-archive\/you-say-tomato\/\" target=\"_blank\">Tomato<\/a><\/strong>, and Feta salad, but it just got even better\u2014and more striking\u2014after brand new executive chef Marcellus Coleman got ahold of it. He let me into the restaurant\u2019s kitchen so I could watch him prepare the salad.<\/p>\n<p><a href=\"https:\/\/www.dietsinreview.com\/diet_column\/06\/your-new-summer-favorite-watermelon-tomato-and-feta-salad\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-98983\" alt=\"Chef Marcellus Finishing Touches\" src=\"https:\/\/www.dietsinreview.com\/diet_column\/wp-content\/uploads\/2014\/06\/Chef-Marcellus-Finishing-Touches-e1403547358642.jpg\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>What to do with the rest of your watermelon? Turn in into <strong><a href=\"http:\/\/www.thebestlife.com\/healthy-diet-recipes\/watermelon-and-balsamic-salad\/\" target=\"_blank\">yet another salad<\/a>!<\/strong><\/p>\n<p><!--more--><\/p>\n<p><b>Watermelon, Tomato and Feta Salad<\/b><\/p>\n<p><i>Serves 1<\/i><\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>4 cubes (about 1\u00bd-inches each) of watermelon (about 1 cup total)<\/p>\n<p>4 wedges of tomato, preferably heirloom (about \u00be cup total)<\/p>\n<p>1\u00bd tablespoons vinaigrette (see recipe below)<\/p>\n<p>Dash of salt<\/p>\n<p>1 sprig thyme, leaves removed (about \u00bc to \u00bd teaspoon), stem discarded<\/p>\n<p>1 heaping tablespoon feta cheese, crumbled<\/p>\n<p>Pea greens, arugula or watercress for garnish (about \u00bc cup)<\/p>\n<p>Basil for garnish (about two teaspoons of either micro basil leaves or regular basil, roughly torn)<\/p>\n<p>&nbsp;<\/p>\n<p><b>Directions<\/b><\/p>\n<p><em id=\"__mceDel\">1. Gently toss watermelon and tomato with vinaigrette, salt and thyme in a bowl.<\/em><\/p>\n<p>2. On a separate plate, alternate tomato and watermelon in a line.<\/p>\n<p>3. Garnish with feta, greens and basil.<\/p>\n<p>Optional: Put a few chunks of watermelon in a blender or food processor and pipette the puree decoratively on the plate.<\/p>\n<p>&nbsp;<\/p>\n<p><b>Nutritional Information<br \/>\n<\/b><i>1 serving<\/i><\/p>\n<p><b>Calories:<\/b> 259<\/p>\n<p><b>Protein:<\/b> 5 g<\/p>\n<p><b>Carbohydrate:<\/b> 19 g<\/p>\n<p><b>Dietary Fiber:<\/b> 2.5 g<\/p>\n<p><b>Total Sugars:<\/b> 14 g<\/p>\n<p><b>Total Fat:<\/b> 20 g<\/p>\n<p><b>Saturated Fat:<\/b> 3.7 g<\/p>\n<p><b>Cholesterol:<\/b> 10 mg<\/p>\n<p><b>Calcium:<\/b> 95 mg<\/p>\n<p><b>Sodium:<\/b> 157 mg<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><b>White Balsamic Vinaigrette\u00a0<\/b><\/p>\n<p><i>Makes about 1\u00bc cups, about 12 to 13 servings<\/i><\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>Vanilla bean (or \u00bc teaspoon vanilla extract)<\/p>\n<p>1\u00bd tablespoons white balsamic vinegar<\/p>\n<p>1\u00bd tablespoons Normandy apple cider vinegar (or other unfiltered apple cider vinegar)<\/p>\n<p>\u00bd cup extra virgin olive oil<\/p>\n<p>\u00bd cup grapeseed oil<\/p>\n<p>1 tablespoon honey<\/p>\n<p>&nbsp;<\/p>\n<p><b>Directions<\/b><\/p>\n<p>1. Cut vanilla bean in half widthwise. Put one half in resealable bag with a teaspoon of sugar and store in the refrigerator.<\/p>\n<p>2. Using a sharp paring knife, split the remaining half of the bean in half <i>lengthwise<\/i>. Starting as close to one end as possible, firmly penetrate the skin and run the knife all the way across. Scrape out all the soft inside (mainly seeds).<\/p>\n<p>3. Place the interior pulp of the vanilla bean in a medium-sized bowl. Add the two vinegars.<\/p>\n<p>4. Slowly add the two oils, whisking as you pour them into the bowl until the oil and vinegar aren\u2019t separated.<\/p>\n<p>5. Whisk in honey.<\/p>\n<p>Note: If you\u2019re not using it right away, place in a container with a lid and shake before using.
