Turkey Loaf

Guilt-free comfort food from the Biggest Loser Resort.

Yield: Serves 4

Ingredients

  • 12 ounces ground turkey
  • 1 cup steamed brown and wild rice
  • ½ cup egg beaters
  • ¼ cup roasted peppers
  • ¼ cup corn
  • 1/8 cup chopped parsley
  • ¼ cup barbecue sauce
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large mixing bowl, add all ingredients, except barbecue sauce, and mix together well.
  3. Spray bread pan with Pam® non-stick cooking spray and add filling.
  4. Bake for about 1 ½ hours.
  5. Brush with barbecue sauce and serve.
