I’ve been loving our new food blogger spotlight series more and more as it’s allowed me to branch out and meet new healthy bloggers I would’ve otherwise never known about. One such new-to-me face is Brittany Barr of Barr and Table, who just happens to be an amazingly talented recipe developer with a healthy dose of personality and passion for fitness. I found myself scouring her recipes page and was hooked right away!
If you visit Barr and Table expect to find healthy, creative recipes for breakfast, post-workout snacks, and filling, simple week-night meals. We recently spoke with Brittany about her blog and her approach to health and fitness. Here’s what she had to say.
Why did you start your food blog?
After being introduced to a new, healthier lifestyle, I began experimenting with different cooking styles, ingredients, and alternative recipes and found a love and passion for food and cooking. While I’ve always loved and appreciated a well-executed dish, I now found myself wanting to recreate this dishes; some in a healthier way.
How would you describe your approach to eating/health?
I fully believe in the 80/20 rule. I do my best to eat clean 80% of the time and when I want to have a treat, I fit that into the 20%. I’ve come to really love fruit for dessert and have found recipes that taste decadent but are totally clean. It’s all about balance and I don’t feel like I miss out on anything.
Have you always had an interest in healthy food or did it come later in life?
My interest in healthy food definitely came later in life. As a kid, I ate my vegetables but you better believe I loved what all kids love: mac and cheese, pizza, peanut butter, brownies, etc. Now I love Brussels sprouts, squash, apples, and peanut butter!
What is your favorite (or a few of your favorites) food/ingredient to use in the kitchen?
Coconut oil is one of my new favorite ingredients to use. I love to use it to roast vegetables, cook my sweet breakfast scrambles, and use it in recipes like my powerballs. It’s so versatile!
Has blogging changed the way you view food and cooking? If so, how?
Without a doubt! When I started my blog less than a year ago, I really wanted to find recipes and figure out ways to make them healthier. Now I find myself looking at recipes and suddenly five different ideas pop into my head for meals I can make. It has also pushed me to learn more about nutrition, which I love.
Favorite recipe to date?
This is a tough one! Breakfast is my favorite meal of the day and I’ve been absolutely loving my slimmed down sweet breakfast scramble. It’s a recipe that I adapted from Tina of Carrots ‘N’ Cake and I can’t stop eating it! If you like oatmeal, I definitely recommend giving this a try!

Buddha’s Feast – one of my most versatile recipes. You can use whatever vegetables you have available, change out the sauce, and add meat or not!
Baby Kale Salad with Roasted Squash, Chick Peas, & Lemon Dijon Vinaigrette – I love using roasted chickpeas on salads instead of croutons and this vinaigrette is perfect for any salad!
Roasted Banana Berry Chocolate Cups – This is a great lighter treat that’ll really satisfy your sweet tooth.
