When you hear about a food blog titled, Peanut Butter & Peppers, you don’t hesitate, you just go look and wow, I’m glad I did. Peanut Butter & Peppers is the brainchild of Jennifer Drummond, who started the site in her quest for continued weight loss and desire to share healthy recipes.
What I love most about the site is how much fun Jennifer is having along the way. Some recipes are quirky (peanut butter hummus anyone?) and her commentary is honest and fresh. Plus, doesn’t her infectious smile make you want to go to her kitchen, pet her two Labrador Retrievers and pull up a chair for coffee and Meyer Lemon Snack Cake? Yes, please!
Why did you start your food blog? When I started my blog I had recently lost a lot of weight, and blogging was my way to keep myself accountable. Plus, I wanted to let people know that if I can do it, they can do it and you don’t need a diet, just a healthy lifestyle. Before, I never would have thought blogging was the missing piece of the puzzle in my life.
How would you describe your approach to eating/healthy? I really believe that you can eat anything you want, as long as you make a few minor changes to make it healthier! I still eat the foods I have always loved, but now they are more nutritious for me and I feel good about feeding them to myself and my family.
Have you always had an interest in healthy food or did it come later in life? It came later in life. I wish I knew in my 20s what I know now. Unfortunately, I didn’t change my lifestyle until I was 37.
What is your favorite (or a few of your favorites) food/ingredient to use in the kitchen? My all-time favorite is Greek Yogurt. It’s so versatile. I use it in baked goods, as ice cream, dips, salad dressings, marinade and more. I’m telling you, I could go on and on! Let me just say I go through about 12 cups a week. It goes in and on everything!
Has blogging changed the way you view food and cooking? If so, how? Yes! I challenge myself to make every meal healthier and I thrive on finding a way to do it. Plus, I’m always up for trying new things, like black bean brownies and veggies burgers. If you would’ve asked me that few years ago, I would’ve turned my nose up at it. It’s really about having fun and experimenting in the kitchen.
Favorite recipe to date? Tough question! It really depends on my mood, but if I had to pick one it would be my Chipotle Bowl. It’s my go-to meal when I don’t know what to make for dinner.
