While most people like to take advantage of sleeping in on a weekend morning, I roll out of bed and start cooking. Similar to most other families, mine is a crazy kind of busy all week. But on Saturdays we get one another’s undivided attention over a hearty breakfast that fuels our equally busy weekends. Since I have a preschooler who rises at dawn, sometimes my version of sleeping in is letting someone else cook, and that’s where I found this sandwich.
One morning at a favorite local breakfast dive, I poured over the menu and couldn’t find anything I wanted. However, the BLT on the lunch menu called to me, especially with the mention of avocado and tomato slices. I asked them to breakfast-ize it with an over-medium egg. They did, and it was glorious. It seemed so obvious, yet, I’d never thought about it before!
Any guilt you’ve harbored for the last few decades over eating a fried egg, well go ahead and shake it loose. Cholesterol is no longer the nutritional enemy we’ve been told to avoid. Let’s be honest, muffins are just breakfast-approved cupcakes. But why does dessert get to have all of the fun? There’s really not an answer so we made one up in the form of a wholesome carrot cake muffin for breakfast. Trust us on this one.
I don’t even like carrot cake, and it was all I good do to eat just one of these. So, maybe I do, in fact, like carrot cake?
With spring’s arrival, it’s hard not to lunge head-first in to the freshest produce around. Carrots are an early arrival, ready for picking in April and throughout the summer months. Whether brunching, celebrating Easter, Mother’s Day, or just looking for a better weekday breakfast, these muffins are a bright addition to your menu!
This recipe has all the components of a good muffin recipe and a good cupcake recipe and you get to have it at breakfast without any awkward self-doubt. Wholesome carrots, sweet pineapple, and warm vanilla combine with whole wheat flour to make a pretty darn healthy muffin. (more…)

Smoothies are the ultimate power breakfast, in my opinion. In one easy and portable drink, you get multiple servings of fruit and vegetables plus protein so it always lasts you till lunch. And no matter what the ingredients are it always ends up tasting delicious, which makes me think my blender has magical powers.
Once I discovered you could add spinach to smoothies without altering the taste, my morning breakfast was forever changed. In this smoothie, we add spinach and green tea powder, or “matcha,” which contains more antioxidants than brewed green tea, raspberries and blueberries combined!
In other words, this is one of the healthiest smoothies on the block! (more…)

Red wine was fine to keep us a little warm and cozy all winter, but now it’s time to chill out! Sangria is one of my favorite summertime indulgences, partly because it’s a healthier way to imbibe when I’m by the pool. No really, it’s true! While most cocktails are just booze and processed mixers, void of any nutritional value, a glass of homemade sangria has a lot more to offer in the way of fresh juices, fruits, herbs, and other ingredients that not only enhance flavor but add fiber and vitamins.
Now, I know as well as you that when we’re pouring a drink we’re not usually considering the health value. I mean, it’s not a salad! And just because you made it with fresh berries doesn’t meant the calories don’t count. BUT, as with all things, if you’re going to do it, there is a way that’s ultimately better for you. Homemade wins every time; and our recipes will be fool-proof winners!
Talenti Frozen Sangria
We’ve found the secret to easy, bold, creamy frozen sangria that you can make at home – Talenti Sorbetto! We just combine their blood orange and Roman raspberry flavors with fresh berries and red wine for a concoction that’s less than 225 calories per glass (compared to more than 500 for Abuelo’s frozen sangria). Remember those oatmeal cookie sandwiches with the creamy, sweet filling that you used to swipe from vending machines and beg your parents for in the grocery store? Well, these are those, only a million times healthier. A cause for healthful indulgence? We think, yes.
These oatmeal cookie sandwiches are almost 100% vegan and made with healthful ingredients like rolled oats, grated carrots, whole wheat flour and banana. Though the inspiration for the recipe was pre-packaged oatmeal cream pies, these little guys take the treat to a whole new level and are even better than the original (we think). (more…)

The first time I ever tried a caprese salad was when I was visiting my much-more-sophisticated-than-I older cousin Billy Jo. She and her husband own an exquisite home in Houston and my sister and I were down for a visit nearly a decade ago now.
Before dinner one night, Billy pullled out the ingredients for a caprese salad – fresh mozzarella, gorgeous roma tomatoes, huge stems of basil, and a little balsamic vinegar.
Never having seen such an adventurous flavor combination before, I watched closely as she meticulously layered the cheese with the tomato, and then the basil, over and over again until the plate resembled the Italian flag. A drizzle of balsamic vinegar finished it off before we all claimed our portion. Admittedly, my then 16-year-old self didn’t appreciate the robust, fresh flavors. But now, it’s one of my absolute favorite Italian bites. This “grilled cheese” sandwich is an homage to that salad with a bit more heartiness and the ease of portability. (more…)

My daughter is turning three this week. As any mother can attest, I just can’t understand where the time has gone. She’s smart, sassy, full of song, and has been waiting for her birthday for months. With no prompting she has provided constant reminders of her wish for birthday hats, balloons (one of each color), and a cake (with fire on top) for months. I was happy to finally oblige with all three this weekend.
The cake, of course, is the centerpiece of any birthday party. But I’m also that mom and sugar is a rare treat in our house – birthdays being a reasonable exception. Still, I didn’t want to overload her, myself, or our guests with a sugar bomb topped with more fat and sugar in the frosting. So, I shared my vision for a fresh, homemade, but easier-on-the-sugar cake with our assistant editor and resident baker extradordinaire, Dana.
This Strawberry Lemonade Cake was a hit! It was rich and dense like a restaurant or bakery cake, but felt clean, light, and perfectly sweet. That’s because we didn’t use any butter and went light on the sugar, but made up for it with honey and fresh strawberries. (more…)

“I’m solar powered,” my grandmother recently said to me in the deepest, darkest part of the Winter That Just Would Not End. I couldn’t have agreed more, I thrive on sunshine! That day, the sun had poked through for the first time in weeks and we were all in a better mood. That night, I couldn’t handle sitting cooped up at our table for dinner one more time, so we made our way to the patio of a Mexican restaurant and enjoyed what will be the first of many outdoor dinners this season.
Our complimentary chips and salsa included a tomatillo and pineapple variety that I hadn’t tried before. One bite was all I needed to try and commandeer that part of the sampler. My husband told me I could make it better. Challenge accepted.

Every holiday comes with its traditional fare. During Lent the fast food chains bombard us with fried fish sandwiches. People lose their minds over Cadbury Easter eggs each spring. Candy corn makes Halloween more enjoyable. And for most of fall we add pumpkin to anything that will sit still. Few restaurants other than your surly neighborhood Irish pub get any attention on St. Patrick’s Day, but during the last ten years, McDonald’s has moved in on that market.
They didn’t do it with corned beef or potatoes or even soda bread, but instead with something not even remotely close to being Irish. They did it with ice cream.
Their Shamrock Shake has almost become the stuff of drive-through legends, falling behind its popular brother the McRib. With much fanfare the restaurant announces “It’s Back!” and fills customers with this cool, creamy mint shake just in time for St. Patrick’s Day. Other than the fact that mint is green and St. Patrick’s day is green, we’ve yet to find much connection between the holiday and the herb.
What we have found is that the McDonald’s Shamrock Shake, for the small 12 ounces, will fill you up with 530 calories, 15 grams of fat, and 73 grams of sugar. That last one sent even us in to a bit of shock. Seventy three grams of sugar in a 12-ounce cup is, to put it mildly, a lot. (more…)

In college there was a bar near campus called The Mont. I say was, it’s still very much there. When I visit campus I like to sit on The Mont patio, order the frozen sangria half of their famous Swirl, and catch up with old friends. I know it’s a lot of sugar and a lot of calories, but it’s not something I get to do very often. In college, I did it a lot more often and well, it showed. With spring break next week, it’s got me thinking about my favorite college dive. It’s not so easy to just run to campus for a Swirl, but I can make my own, and even control those pesky calories. Since, you know, I’m a little older and I care a little more!
I don’t have a frozen drink machine at home, but I do have a blender and access to Talenti Gelato and Sorbetto. Yes, I’m going there. We keep experiencing these little glimpses of spring, which immediately puts me in the mood for summer. Does that make me an over achiever or impatient? Either way, both seasons make me want to sit on my patio, sip something delicious, and revel in my family and friends. I can’t be alone in this – just look at the Mason Jars full of beverages on Pinterest. We’ve all got the itch.
The scratch? My Sweet and Sour Vodka. It’s as light and refreshing as a tart glass of lemonade but has that little somethin-somethin to bring you back down after a long day. It’s. Amazing.
I stopped buying the jug o’ drink mixer at the grocery store years ago. Master of Mixes’ Sweet ‘n Sour has 110 calories and 25 grams of sugar per four-ounce serving. Our recipe has TEN calories and LESS than 1 gram of sugar. That neon yellow color, ridiculous after taste, and undesirable ingredient list left me thirsty for something better.
The answer was in front of me all along – my own lemons and limes squeezed to cocktail-mixing perfection. (more…)
