Cheesy Broccoli Potato Soup
Challenger KarinElizabethMeares ushered in spring with one last pot of soup. Meals like this are economical, healthy and can either feed a crowd or be frozen for a quick-fix later.
The first day of Spring found Oklahoma in a mini-snow storm. That was the perfect excuse for me to make some body and soul warming soup. To keep it a little healthier than a traditional soup I used a low fat cheese and whole milk instead of heavy whipping cream. It, admittedly, does change the texture and consistency, but it is worth it to know that I can enjoy this potful of yummy guilt free. The broccoli adds color and all sorts of great flavor to the soup and is an easy way to make a one pot, full serving of vegetables meal.
