Peanut Butter Fix
The 100-calorie mini challenge helped challenger MiniMiMi not only enjoy a satisfying snack she loves, but she also had to read the dreaded food label. A healthy lesson for anyone trying to watch their figure and cook more healthfully. Calorie saving tip: Switch to almond butter and save about 47 calories for that same one-ounce serving.
Snack time without at least a little peanut butter just doesn’t satisfy me but when I decided to try the 100 calorie challenge I looked at my reduced fat peanut butter and realized it has 190 calories for two tablespoons. The only way to keep 1 tablespoon under my 100 calorie limit was to pair it with something with very few calories – celery. I threw a few golden raisins on top and was still able to enjoy my peanut butter and take part in this weeks mini challenge. Viola!
