One of the recipes I just knew I’d love from “I Can’t Believe It’s Not Fattening” was the Apple Cinnamon Bruschetta! I made it for an afternoon snack and we really enjoyed it! We love snack time!
It looks like challenger DietDiva took us up on our go green mini challenge, and made one for herself: turn her monthly date night into an equally romantic evening alone while doing it at home.
My husband and I try to make time for at least one date night a month. With two small children at home we really enjoy an evening to ourselves. Typically we spend this night out having dinner at an expensive restaurant and watching a movie at the theater. This month, during the cook at home challenge we decided to try a date night in with a meal we worked on together. We made Bacon Wrapped Tilapia (a recipe from I Can’t Believe It’s Not Fattening) with green steamed broccoli on the side. It was delicious and we really enjoyed working in the kitchen together. Plus we saved a handful of green by enjoying our homecooked meal and trading in our movie out for a Netfilx on the couch. The meal was easy & elegant, something I look forward to making for dinner guests in the future!

I was so excited to finally receive my copy of the much awaited “I Can’t Believe It’s Not Fattening” cookbook today! I can’t wait to try out the new recipes and I quickly took note of which ones I could prepare with what I had on hand. Tonight we tried out the Enchizza which is basically a little Enchilada inspired pizza! It was absolutely delicious and even my picky 3 year old enjoyed it – this is a crowd pleaser for anyone who loves mexican flavors! One of the tips in the book is to keep basic grilled chicken cooked and at the ready so it can be quickly added to other ingredients for fast meals! Seeing for myself just how quickly dinner came together when this step was completed earlier in my day made me a believer! I plan to make this a habit! Being prepared is so key!

Breakfast is a great opportunity to take on Chef Devin’s cook with fruit challenge. While calorie rich fruited muffins used to be a staple a new favorite healthy recipe in our home is Apple-Cinnamon-Muffin Oatmeal, a recipe discovered in the Biggest Loser cookbook. On this chilly morning it was great to enjoy this treat curled up on the couch while thumbing through my favorite cookbooks planning out meals for the rest of the work week. Every bit as indulgent as the muffins that always plagued my weight-loss efforts this oatmeal delivers all the flavor and comfort without empty calories and excess fat. Yum!

Inspired by Chef Devin’s cook with fruit challenge I put together these pineapple, chicken and mushroom kabobs before heading out the door to spin class with my sister. After class we headed to my house, threw these on the grill and enjoyed them while watching the Biggest Loser! Great night and feeling so inspired by empowering myself with healthy cooking to fuel my weightloss!
