Mash beans and banana. Add all ingredients except oil. Place in refrigerator for about 15 minutes. this helps the burgers hold together. Oil hands and shape into 8 burgers. Cook in pan slightly coated with oil over medium heat for about 5 minutes per side or until crunchy.

In large skillet cook mushrooms, onion, till cooked and veggies are tender. Dissolve bouillon in boiling water then add to meat mixture, along with dill, and pepper. Cook uncovered at a slow boil till liquid is reduced to half. .Stir together sour cream and flour then stir into meat mixture. Heat till thickened, but do not boil. Toss and mix with cooked noodles (not in NI). serve.

I love avocados so here is my idea of a healthy salad incorporating them…a fruit…for this weeks challenge.

I made this this morning for our family breakfast and I got 4 out of 5 thumbs up from family members. It is a keeper in this house and we look forward to having it again!
Dry ingredients:
3c oats
1T cinnamon
1T baking powder
1t salt
12 pkgs Truvia (or sweetener of choice)
Wet Ingredients:
6 bananas, mashed(about 5)
1 1/2c skim milk
3eggs
2t vanilla extract
2c frozen blueberries
Pre-heat oven to 350 degrees. Spray 9×13 pan with cooking spray.
Mix dry ingredients in large bowl. Mix wet ingredients in another bowl. Combine them together in large bowl and stir in frozen blueberries. Pour mixture into prepared baking dish. Bake for 1 hour. Enjoy
