Americans have adopted the Mexican holiday of Cinco de Mayo as one of our very own. And why wouldn’t we? It’s colorful, flavorful, and down right fun. In a world that could always use one more excuse to celebrate, we say why not!
Typically, Cinco de Mayo is a veritable smorgasbord of all-things-cheese-coasted with endless chips, salsa, and margaritas. Hopefully, you’re all waiting until it’s at least 5 o’clock somewhere to dig in! This year, being that Cinco de Mayo falls on a Saturday, we think you should start the party early with a Mexican-themed brunch. The centerpiece of which should be our Grapefruit and Lime Mimosa.
It’s as bright and bold as the culture of Mexico, and will certainly be a refreshing departure from your standard OJ and champagne.
You only need four simple ingredients:
1 grapefruit
1/2 lime
1 orange
Champagne or sparkling wine
Preparation isn’t too involved, if you don’t mind squeezing citrus and popping bubbly.
Slice the grapefruit in quarters, and do the same with the lime and orange. We hand squeeze, but if you have a juicer you can use this too. Fresh squeezed juice tastes better, of course, but if you need to buy juice go ahead.
In each of two champagne glasses, add juice of 1/2 a grapefruit, 1/4 a lime, and about a tablespoon (or splash) of orange juice.
Then, carefully pop the cork from your champagne and pour over the juice until the glass is full. Garnish with a lime wedge and serve while still chilled.
While these mimosas are delicious all by themselves, they’ll certainly complement a meal of Mexican favorites perfect for brunch.
