We really love Jenn and all the Fit Bottomed Girls, so when we learned last year that they’d be adding a third site to their sassy suite, we couldn’t help but ask if we could be a tiny part of it. FitBottomedEats.com is one of our favorite places to share our original recipes. Each month we craft a dessert, or breakfast, or entree that fits in to the lives of the easy-going, no-fuss ladies who visit there. We never make anything we wouldn’t, or don’t, eat ourselves and love that marriage of healthful and flavorful ingredients that always result in a winning recipe.
Each link will take you to the original recipe featured at FitBottomedEats.com. Be sure to tell Jenn we sent you!
Cheesy Stuffed Pepper Enchiladas
We took everything we love about the classic green chili enchilada and stuffed it in to a big ‘ole bell pepper. In ditching the carb-loaded tortillas and typical cheddar cheese, we can focus on the flavor and wholesomeness of this quick and satisfying dinner.
We stuffed a soft spinach tortilla full of everything you love at breakfast and still managed to make it healthy! We used Applegate’s breakfast sausage links, which cook in mere seconds in the microwave, scrambled an egg, chopped fresh bell peppers, and sprinkled a bit of cheese. It’ll fuel your morning without interrupting your flow.
Mediterranean Chicken, Pear, and Arugula Pitas
We call this the dinner for busy people! With one grocery store rotisserie chicken, and a couple of really simple ingredients, you can have a healthy, satisfying meal in minutes that you and your schedule can feel good about. Tender roasted chicken, fresh and peppery arugula, crispy pears, and a little balsamic vinegar are all you need to pack these pitas full.
Kale Salad with Orange Tahini Dressing
This is the best salad we’ve ever made, and we say that with confidence because it’s the only one we’ve ever made that’s won an award. No bigs, but we picked up a 2024 Noshie from the Fit Bottomed Girls for crafting this crisp, tangy salad made with crunchy kale, carrots, and apples, all topped with a homemade dressing of orange juice, honey, lemon, and tahini.
Slip in to summer with a most sippable mock-tail. The Spanish translation says an agua fresca is sweetened water with pureed fruit. Whatever it means, it sounds delicious and we love the variability. For the FBE, we combined the classic tart and sweet flavors of strawberries and lime with water and a natural sweetener. Just add ice and enjoy!
Chocolate Pomegranate Cupcakes
We hooked you guys up! This rich, indulgent cupcake is actually not bad for you! It’s sweetened with pure pomegranate juice, so each chocolatey bite has a juicy tasting burst. Plus, we top it with a gooey cream cheese frosting that’s totally guilt free and we use pomegranate arils in place of junky sprinkles. They’re almost too pretty to eat!
We’ve turned one of America’s favorite comfort food into a perfect party finger food. All of the hearty chunks of chicken and sweet peas are folded inside flaky pie crusts for a miniature version of this meat pie. We even managed to put the gravy inside!
Smoothies are one of our most go-to recipes for breakfast. Not only can they be made anyway you can imagine, but they are one of the fastest, easiest, and most filling “meals” you can have in the morning. We use just four ingredients to get you fed and on your way in the morning, including bananas and Greek yogurt, too!
