October is National Spinach Lover’s Month!
Spinach is a much maligned vegetable, due in part to its strong flavor. It’s unfortunate that many people avoid spinach, for it truly is a superfood and is one of the best vegetables you can add to your diet. It has a high nutrition content, is rich in antioxidants and is an excellent source of iron, Vitamin C, niacin, Vitamin B and calcium.
Spinach can be delicious in many different ways. Most often, people avoid spinach because of its strong taste, especially when it is over-boiled and, shall we say, slimy. If you’ve been turned off in the past by an unpleasant preparation, why not try some of these yummy recipes? You are sure to find one that will appeal to your palate, and see wonderful benefits to your diet!
- Fresh spinach, especially baby spinach, is delicious in salads. Either mixed with other greens and vegetables, or served alone, spinach salad is a favorite in my own home, even with my 6-year-old. Combining fresh spinach with citrus is an excellent way to enjoy more calcium absorption.
- Spinach is delicious is smoothies. Green smoothies might look odd but they are great sources of vitamin C and other vitamins. I often add baby spinach leaves to my fruit smoothies. I was initially resistant to the thought, but it didn’t change the taste of the smoothie and I feel like I’m really doing something good for my body.
- Spinach is delicious added to pizza, vegetable dips, pasta bakes and macaroni bakes.
