Waking up to pancakes, French toast, or waffles in my house is a staple of the weekend. My soon-to-be three-year-old daughter asks to make pancakes most mornings of the week and every day I have to sadly decline. I make up for it by giving her a frozen waffle so we can all eat and get out the door. But she knows when it’s Saturday and she expects bowls full of batter and big drizzly pours of honey.
I would alternate between the Van’s or Earth’s Best frozen waffles. They’re both organic, whole grain, have a few bites of blueberries, and taste really good. They both also run almost four dollars for six waffles. Lately I’ve been trying to make more of our own bread and homemade salad dressing to save money and ensure we’re eating the best quality food. I figured the waffles would fit right in there andI was right.
We swapped pancake batter for waffle batter a few months ago and I haven’t paid for a box of waffles since January. I tried blueberries at first and it was a small disaster, but I didn’t want to give up on fresh fruit so I went for apples and they proved to be a worthy ingredient.
These waffles are crisp on the outside and tender on the inside, the way a waffle should be in my opinion. They’re also filled with whole wheat flour, freshly grated apples (I can’t get enough Honeycrisp but any variety will work), warm cinnamon, and hearty oats.
Whenever I make a new batch, we of course sit down and eat them for breakfast. I like mine with fresh berries and honey. My daughter likes them as is or dipped in honey. When served dry, they are a really healthy, really simple on-the-go breakfast that she can eat in the car. I just divide the waffles with parchment or wax paper and freeze in a baggy. I usually double or triple the batch and then I’m off the hook from manning the waffle iron for a few weeks.
Apple Cinnamon Oatmeal Waffles
yields 8 waffles
INGREDIENTS
1 cup whole wheat flour
2/3 cup all purpose flour
1/2 cup oatmeal
1 apple, grated
1 Tbsp. sugar
4 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
3 eggs
2 cups low-fat buttermilk
2 Tbsp. unsalted butter, melted
INSTRUCTIONS
1. Mist waffle iron with cooking spray.
2. Combine dry ingredients in a mixing bowl.
3. Combine wet ingredients, with the apple, in a different bowl. Then, add to the dry and stir until well combined.
4. Pour over waffle iron until edges are crispy and brown.
5. Serve topped with honey and fresh strawberries.

My son and I just gobbled these up! They were very yummy and easy to make. The recipe only made 4, but we have a big Belgian style waffle iron so I’m sure that is why.
