Fall Veggies for Your Healthy Thanksgiving Table

We all know of Thanksgiving as a day of gluttony. I mean, a day of giving thanks for the people we love. Yes, that’s it. But in between bouts of gratitude, there is usually a large, figure-unfriendly meal involved with the national holiday.

Thanksgiving also kicks off the winter holiday season, which can be a season of sweets, treats and indulgences. To keep yourself from ditching your diet plan on Day 1 of the holiday season, make sure there are plenty of vegetables to go around on your Thanksgiving table.

Brussels Sprouts: The tiny green orbs might have a reputation for being less than favorable, but they also deliver a sweet, nutty flavor that is hard not to like. Shred the fiber-rich veggies into a salad with apples and raisins – the sweet fruit elicits the natural flavor of the sprouts. Toss them in your favorite vinaigrette and you have one side dish ready to go without even using the oven. (more…)

Kimkins Diet Founder Guilty of Fraud, False Advertising

After several years of battling in court, a judge has rendered a decision in the class action lawsuit against the controversial Kimkins Diet. On Friday, Judge Rick Brown of the Riverside County Superior Court entered a verdict for the plaintiffs in the certified national class action lawsuit. She was found guilty of fraud and false advertising.

The court awarded the class members restitution in the sum of $1,824,210.39. The court also awarded an additional $500,000 in punitive damages and attorney fees, and issued a temporary restraining order to freeze all of Ms. Diaz’s assets. (more…)

USDA Teams With Author Brian Wansink to Improve Lunches in Wichita Schools

Brian Wansink, author of the bestselling book “Mindless Eating: Why We Eat More Than We Think,” has been hired to help improve school lunches. Wansink, former director of the USDA Center for Nutrition Policy and Promotion and director of the food and brand lab at Cornell University, has long been successful at getting people to make healthier choices. His book focuses on how people make hundreds of decisions each day about food. His belief that people make different food choices based upon their environment has recently been put to trial in Wichita cafeterias and will be slowly moving nationwide. (more…)
