Guest Blog: What does a vegetarian eat?

When people find out I’m a vegetarian, they often ask “what do you eat?” I sometimes ask myself the same question, but after 15 years of being meat-free, the answers are almost second nature to me. Still, many people see my lifestyle as “hard” or downright impossible, especially when they find out that I’m a cyclist and a swimmer.

Where do I get my protein?

Am I getting enough iron?

What about omega-3 fats?

Surely you must miss bacon?

True, some ask because they are skeptical about my diet, but many others ask because they want to cut down on their own meat consumption for various health or environmental reasons. I don’t mind which camp you fall into; I’m always happy to talk about food. Here’s how this vegetarian typically gets her daily fill of protein, carbs and fat.

Breakfast is almost always Bircher muesli, a delicious cereal of uncooked rolled oats, apricots, almonds and flaxseeds that have been soaked in water overnight, then mixed with grated apple and lemon juice. I eat this with yogurt and honey or a bit of sliced banana and it’s perfect for warm, summer days.

Next to its natural sweetness, the best thing about Bircher muesli is its packability. If I hit the pool in the morning before work, I can take my muesli with me and enjoy a satisfying, post-workout breakfast that’s way more tasty and nutritious than a Power Bar.

During the week, lunch is usually a variation on the theme of leftover beans: minestrone soup, mixed-bean chili, or lentil dal, just to name a few. I make big batches of this stuff which I freeze in individual portions making lunch as easy as a trip to the microwave. When I have extra time (and I almost always have time for good food), I make up a fresh salad to go with it.

On weekends, lunchtime favors the stove and toaster over the microwaves:

  • Black bean tacos with avocado, tomato and fresh cilantro
  • Tofu “scrambled” with onion, green pepper and tomato, seasoned with turmeric, soy sauce, and chili flakes then served with toast
  • Vegetarian mixed bean chili served over a baked potato or with corn bread
  • Whole-wheat bread with hummus and mixed veggies (pictured)
  • Poached eggs on toast with steamed spinach
  • Veggie omelet with toast

I’ve already eluded to some of my dinners which often make their way to the freezer or my lunchbox. Indian food is very popular, as it’s easy to make, high in protein, and absolutely delicious. My meals vary throughout the year, depending on the season, but lentils, beans and tofu are a mainstay. My favorite go-to easy meals are :

  • Indian lentil dal with steamed greens and basmati rice
  • Pasta and chickpeas with tomato sauce served with steamed broccoli or mixed salad
  • Quinoa with puy lentils cooked in vegetable stock, served with greens pan-fried in onion and garlic
  • Curried chickpeas with tomato and spinach, served with basmati rice
  • Tofu and vegetables stir fried with garlic, ginger and soy sauce, served with brown rice
  • Roasted eggplant, tomato, red pepper and thyme served with crusty white bread and a glass of red wine
  • Tempeh sloppy joes (pictured above)

The foods I’ve described are my staples, but one of the things I love about being a vegetarian is that it forces me to constantly experiment with new recipes and techniques. Sometimes it’s fun to spend hours in the kitchen, but my favorite success is when I find something new to add to my list of reliable easy meals.

Life after “The Biggest Loser” has proven quite interesting. I’m discovering new things about myself daily. For example, my head is not too small for my body, it’s actually proportionate. Or, realizing that I don’t have to stress out about whether a waiter is going to sit me at a table or a booth. Or, better yet, the fact that I can actually see my feet without the assistance of a mirror, which by the way, are not as small as I thought they were!

Now these things initially may seem cliché, but the truth is, they were all very real concerns of mine when I was living life at a heavier weight, they were just a few of the unspoken fears that actually governed my day-to-day life. So the question now is, “Given this new lease on life, this new body, and brand new wardrobe with clothes that are now labeled medium instead of XXL, who am I?”

I know this might sound strange and to a certain extent ungrateful, being that I spent many a night praying for this sort of a dilemma. However, the truth is getting to know myself minus the protective barrier I carried for so long is both extremely frightening as well as incredibly exciting! When I share with people the fact that I lost 130 pounds while on the show their response is “Wow, you lost an entire person!” to which I usually respond, “Yes, I did” and continue about my day.

However recently I have been thinking more and more about this conversation and I am realizing that I did lose an entire person- both literally and figuratively. Given this realization, I am now faced with the challenge of grieving the loss of the old Bernie and acquainting myself with the smaller reality of a new me.

In addition to living this new healthy life, I’m passionate about giving back to our community at large. From time to time I’ll share causes that I find worthwhile. The Give Shirt is one that helps a variety of charities and let’s you keep the shirt off your back.

Healthy Summer Smoothies

While you’re working on toning that flat tummy for summer, don’t forget to stay cool with something tasty and refreshing. Smoothies are always a summer favorite- cold, creamy and they hit the spot. While it’s probably easier to run into your neighborhood smoothie shop, those health-minded smoothies are often packed with more calories, sugar and even sodium than you might have suspected, and it’s certainly going to save some cash by preparing them yourself.

AskMen.com (apparently guys like smoothies!) put together a guide for “Healthy Summer Smoothies.”

blueberry smoothie1. They point out that smoothies, made with the right ingredients, can provide multiple servings of fruit, vitamins and antioxidants- all powerful nutrients you need to push you through the hot, active summer days.

2. Save money and enjoy fresher flavor by selecting in-season fruits. Just because they’re available at the store, doesn’t mean it’s their time. Summer fruits to use include Bananas, Blueberries, Cantaloupe, Figs, Grapes, Kiwifruit, Lemons, Mangos, Peaches, Persimmons, Plums, Strawberries and Watermelon.

3. Seek nutritious calories, not empty- as in smoothies not soda. Smaller portions, especially when made at home, can provide you less calories and be just as satisfying.

Our favorite of the AskMen.com smoothie recipes was the Blueberry, below. They also shared Lemonade Smoothie and Strawberry Smoothie.

Blueberry Smoothie
1/4 cup orange juice
1/2 cup plain, low-fat yogurt
1/2 cup washed, stemmed blueberries
honey to taste
2 cups of ice
Mix all ingredients in a blender and blend until smooth. Serve while it’s cold.
4 Weight Watchers Points, 214 Calories, 43.8g Carbs

Cheers! 5 Ways to Have a Drink on a Diet

While alcoholic drinks are often referred to as “empty calories,” they aren’t all absolute disasters for your diet. My favorite motto with regards to healthy living is “all things in moderation.” I feel that if you live trying to deprive yourself you will only be miserable, and almost definitely end up eating — and drinking — more than you should out of resentment.

So, if you find that you need to have a drink or two to wind down at home, or as part of your weekend socializing, here are five tips from the folks over at WebMD:

1. Alternate alcoholic and non-alcoholic drinks to save calories. Sometimes the difficulty in moderating your drinking is the amount of time you spend in a social event. You finish your first drink, but you plan on hanging out for another couple of hours. The best way to handle the situation is to have non-alcoholic drinks in between, and preferably non-caloric. Try some sparkling water with a with a twist of lime, or even a splash of cranberry.

2. Choose wine, light beer, or simple cocktails made with low-calorie mixers. There are trendy mix drinks out now that pack an incredible amount of calories. Keep it simple. Wine and light beer will usually set you back less than 150 calories.

3. Skip the mixer. Alcohol is already good for a sugar spike. And if you add mixers they often increase sugar and calories exponentially. Instead, choose soda water or a twist of lemon or lime.

4. Dilute your drink. Wine spritzers, which is wine diluted with sparkling water, is a great way of reducing calories. You can also order a vodka tonic or with a splash of cranberry instead of the full amount of orange juice or regular soda.

5. Have a game plan. If you decide in advance what your strategy is, you will be much less likely to slip up.

Food Find: HoneySuckle White Italian Turkey Sausage

We’re big fans of Italian food in my house. We’d eat pasta or pizza every night if we could get away with it- but we can’t. My Food Find this week is HoneySuckle White’s Italian Turkey Sausage.

honeysuckle white turkey sausageI’d had a craving for stuffed shells for a while, but wouldn’t give in because I just didn’t want to let myself eat the Italian-style pork sausage and lean ground beef combo I typically use. While grocery shopping I spotted the HoneySuckle turkey sausage, and figured I’d give it a shot.

My Recipe
We were pleasantly surprised. The flavor is fantastic, it crumbled just the way I wanted and I didn’t feel bad for eating it. I added chopped mushrooms, shredded carrots, chopped sweet red pepper and fresh basil to my sauce, packed the mixture into whole grain pasta shells, sprinkled the top with a little parmiggiano-reggiano cheese and baked a fantastic pasta dish, with a healthy kick.

Mediterranean Diet preventing Type II Diabetes

A newly released study from Spain is praising the ideals of the Mediterranean Diet for its prevention of type II diabetes. The diet is based on the lifestyle for that part of the world- rich in fresh fruits and vegetables, olive oil, nuts, fish and legumes. The key for diabetics is in the Mediterranean Diet’s avoidance of animal products, like meat and dairy.

The study, conducted in Spain, followed more than 13,000 individuals for 4.4 years. Those who followed the diet most closely reduced their risk of type II diabetes by 83%.

In addition to following a healthy diet, like the Mediterranean, regular exercise and maintaining a healthy weight are two other strong preventatives for type II diabetes and heart disease.

Looking Good… Naked

Many of us can don our favorite pair of jeans or even our bathing suits and feel pretty confident with how we look. But looking good naked? Yikes! For those of us whose name is not Gisele Bundchen, we feel like turning off the lights, closing the drapes and throwing towels over our bedroom mirrors when we are sans clothing.

But leave it to Oprah Winfrey and famed stylist Carson Kressley, one of the Fab Fives from the television show “Queer Eye for the Straight Guy,” to save us from our naked misery. Friday on Oprah, the show is reaired an episode on how to look good naked.

Kressley does NOT suggest that you starve yourself on a 3-day crash diet or wear the piece of spandex cinched around your waist to make your middle look smaller. Instead, he focuses on the crux of our incalculable fear in being bare: Self-Esteem.

With some very creative and heartfelt ways of communicating with these women, he tries to show us that all the self-berating we inflict upon ourselves, is just that: a harmful dialogue that exists in our heads and in our heads only. In fact, when it comes down to it, more often than not, we see ourselves much heavier than what we really are.

You’ll have to turn into Oprah on Friday to see how he accomplishes this factual and illuminating reality. One of the lines that I love from this show is “You don’t have to be perfect to be pretty.” Isn’t that true? If you have ever dealt with a weight issue or body image problem, watch this episode. It’s 60 minutes of television that has the capacity to really change how you see yourself.
