Now Eat This!: 150 of America's Favorite Comfort Foods, All Under 350 Calories is a book written by Chef Rocco DiSpirito. As the title suggests, Now Eat This! gives healthier alternatives to many of the foods Americans enjoy without packing on the calories, fat or sugar. In this book, Rocco includes 150 recipes for what he calls "downfall dishes" like fried chicken, macaroni and cheese, brownies and New England clam chowder. He saved all of the flavor and quality of these classic recipes, but made them significantly better for us to eat.
Every recipe in the book has 350 calories or less, is low in fat, and has no sugar. Too good to be true? You could say that, if Rocco hadn't recently undergone his own 30 pound weight loss journey, and being a lover of these downfall dishes himself felt incredibly motivated to make healthy food that tastes good.

The premise of Now Eat This! is all about the eating part of losing weight. This book contains recipes for 150 different foods that American's don't want to live without, and shows you how to make those foods in a much healthier way than you're used to.
Chef Rocco provides the nutrition information for each recipe included, and also shows you what the calorie and fat count would be if you were fixing these items the traditional way.
Chef Rocco relies on accessible, flavorful ingredient alternatives to accomplish similar textures and tastes, and is able to significantly slash calories and fat, while also maintaining the inclusion of zero sugar. For instance, black beans replace flour and fats in brownies, while Greek yogurt replaces butter and cream in macaroni and cheese.

Exercise is not a primary theme of Now Eat This as it is a cookbook. However, inspiration can be drawn from Chef Rocco's personal account of using a personal trainer with daily double-cardio sessions to help shed 30 pounds and drop from 20 percent body fat to 12 percent, as well as training for and completing a triathlon and an iron man.

+I have made several recipes in the book and it really is unbelieveable how good they are for diet food. The brownies keep you full for hours at only 53 calories. I put a little cool whip on the top. Mac n Cheese could use a little less of the puree and I used greek yogurt and it was just as good with less calories then sour cream. Can't wait to try more.

+This is a great resource for sliming down your favorite foods, however if you are watching calories closely, check the calorie of the items using your own resources. I found calores reported in the book to be off (too low) by as much as 65%! The Gooey Poppers report 144 cals, my calcs say 212 - that can add up if your diet intake values are strict.
