Celebrate Spring with a Batch of Carrot Cake Muffins

Let’s be honest, muffins are just breakfast-approved cupcakes. But why does dessert get to have all of the fun? There’s really not an answer so we made one up in the form of a wholesome carrot cake muffin for breakfast. Trust us on this one.

I don’t even like carrot cake, and it was all I good do to eat just one of these. So, maybe I do, in fact, like carrot cake?

With spring’s arrival, it’s hard not to lunge head-first in to the freshest produce around. Carrots are an early arrival, ready for picking in April and throughout the summer months. Whether brunching, celebrating Easter, Mother’s Day, or just looking for a better weekday breakfast, these muffins are a bright addition to your menu!

This recipe has all the components of a good muffin recipe and a good cupcake recipe and you get to have it at breakfast without any awkward self-doubt. Wholesome carrots, sweet pineapple, and warm vanilla combine with whole wheat flour to make a pretty darn healthy muffin. (more…)

Apple’s Upcoming Health App Predicted to Break Boundaries

With the growing popularity of virtualized health tracking apps, Apple is sure to have something coming down the pipeline soon not only to compete, but to surpass.

9-to-5 Mac  released details on Monday regarding their new project, and is projected to be “a tipping point for mobile healthcare”. They’re calling it Apple Healthbook and it’s designed to track blood sugar (huge factor for those with diabetes!), heart rate, breathing rate, weight, hydration, sleep, nutrition,  physical movements, and health test results, among other stats.

How will this app stand out from the rest? One company, for example, offers over 40 health and fitness iPhone apps alone. It is said that virtual health tracker and resource apps can significantly reduce healthcare costs and are predicted to one day be subsidized by healthcare providers to promote their usage. (more…)

Work it Off: 3 Ways to Burn Off the 272 Calories in a Slice of Cheese Pizza

As a former New Yorker, I used to live on pizza. (Or, “slices”, as we said in Brooklyn.) I had a handful of go-to spots, places with thin crust that’s been tossed to perfection, savory sauce, and just enough cheese. But when I moved I largely gave up my pizza habit. It’s not as easy to come by restaurants selling slices to go, and the consistency is just different. Or so I thought.

A few days ago I stopped into one of the few local pizza chains that do offer individual slices. Most were piled with artisanal toppings—things like roasted squash and apples—but on that particular day I spied what looked like a classic slice. Fresh mozzarella, a little red sauce peeking thorough, and not much else.  I ordered one, sprinkled on a few fresh pepper flakes, and was immediately transported. It tasted like home.

Still, my waistline has been happy to not have to deal with regular stops for slices. Just how many calories had that pitstop cost? Around 272, by my math (and Self.com). (more…)

Military Wife Who Dropped 100 Pounds and Surprised Deployed Hubby Has Kept It Off For Almost A Year

Last spring, Misty Shaffer gathered with her family at the airport and waited anxiously for the arrival of her husband who had been stationed in Afghanistan for 12 months. When Larry scanned the crowd for his wife, his jaw dropped when he spotted her. After secretly losing 100 pounds while he was deployed, all Misty could do was smile.

Saturated Fats Don’t Cause Heart Disease? New Research Revealed

Are saturated fats inherently bad for you? For years, the idea drilled into our heads has been that the saturated fats found in meat, cheese, and butter are to be largely avoided due to the increased risk of heart attacks, stroke, and heart disease. But now we’re not so sure.

A new analysis of research was released in the journal Annals of Internal Medicine this week, and reported by the New York Times health blog here, cast doubt upon this guideline.

The new research reviewed over 80 studies that looked at what the participants reportedly ate, plus blood test results that measured fatty acids and cholesterol levels. This analysis did not find increased heart disease in those who ate less saturated fat, nor did it find less disease in those eating more unsaturated fat—the good stuff found in natural foods like olive oil, fish, and avocados. It did, however, notice a benefit in those taking Omega-3 fish-oil supplements in preventing the onset of heart disease. (more…)

More Fraud Charges for a Powerhouse in the Diet and Fitness Industry

Another weight loss giant has been taken down on charges of fraud: Kevin Trudeau, author of the book “The Weight Loss Cure ‘They’ Don’t Want You to Know About” was sentenced to 10 years in prison for making false claims about the content of his diet manual on TV infomercials.

According to Reuters, it was first in 2004 Trudeau that got into trouble for misrepresenting his products on TV. But that didn’t stop him. In 2006 and 2024 he aired a misleading infomercial for “The Weight Loss Cure ‘They’ Don’t Want You to Know About” around 32,000 times. In 2024 he was asked to pay consumers around $38 million for misrepresenting the contents of his book. He never did, which subsequently landed him back in court, and now in prison.

In the spirit of SXSW, Kimmel and Judd joked about their love of food, with Judd saying that she had “eaten her way through the lone star state.” Judd admitted that she spends a majority of her time in a new film role planning the food she will eat on set, and she also thoroughly discussed her love of Do-Rite Donuts in Chicago. Judd shared that good ol’ old fashioned doughnuts are her favorite kind, so much so that a whole box of them ended up on her chair on the set of her latest film Divergent. (more…)

What NOT to Eat on St. Patricks Day

A traditional St. Patrick’s Day breakfast of corned beef and cabbage with potatoes and soda bread is a fairly balanced meal, if a little high in carbs and soda bread.  It’s also a much healthier choice than a lot of the other St. Patrick’s Day foods and dishes currently on the menu at a number of chain restaurants. These foods may be green, but they are not exactly good for you! So, if you plan to splurge today, go ahead and enjoy the real Irish deal, not these unhealthy options!

Mint Oreo Creme Donut from Dunkin’ Donuts: This dessert disguised as breakfast is sort of like Ben and Jerry’s Mint Cookie Ice Cream, only in donut form. The bakers at this largely Eastern and Central chain start with a yeast donut, cover it with mint frosting and bit of Oreo cookies, and top it off  with a heaping helping of frosting in the center. The thing weighs in at 400 calories, 22 grams of fat, and 9 grams of saturated fat–or about 45% of your recommended daily allowance.
