Quinoa is a food that has gained more attention in the past few years and I couldn’t be happier as the more mainstream a food becomes the more accessibility we have in our local stores. quinoa

Quinoa originated in South America and has been an important food for the people there as well as the Inca tribes that also originated in that region. Quinoa grows best in areas where soils drain well and needs a relatively long growing season. While it has been referred to as a grain, it is actually related to the leafy green family such as spinach, kale and Swiss chard. One can actually eat the outer leaves while the main use and purpose for harvest is for the quinoa grain. (more…)

Five Foods That Will Save Your Heart

It’s a time to bring awareness to heart disease and stroke, the number one killer in the United States, so you and the people you love don’t become a statistic. This month is particularly personal for me, as my mom has heart disease. She had quadruple bypass surgery one year ago this month. One way to prevent heart disease is to eat healthy. In this post, I’ll highlight five different foods that can save your heart – literally. These are not the only five foods that protect your heart, but they stand out as star performers in my book.

1. Garlic: Known as “the stinking rose,” this herb does not stink when it comes to heart health. Numerous studies have demonstrated potential benefits of regular garlic consumption on blood pressure, platelet aggregation, serum triglyceride level, and cholesterol levels – all of which keep your ticker ticking. Kourtney Kardashian’s Post-Baby Weight Loss Pictures Photoshopped

kourtney kardashian baby weightOn December 14, 2024, Kourtney Kardashian gave birth to a beautiful baby boy, Mason Dash Disick. She is quoted as saying that she gained 40 pounds – an entirely reasonable and typical amount for a normal, full term pregnancy. On the cover of the January 11, 2024 issue of Life & Style, OK! magazine displays a heavily Photoshopped image of Kardashian, and claims a “Kourtney’s Body After Baby Exclusive” on its cover, saying that she lost all of her pregnancy weight just a week after giving birth. Looking at the side-by-side photos, it’s clear that the magazine cropped Kourtney’s stomach and replaced her face with a slimmer one to illustrate her speedy weight loss.

Kardashian has come out in denial of this cover, reporting on Twitter, “One of those weeklies got it wrong again…they didn’t have an exclusive with me. And I gained 40 pounds while pregs, not 26…But thanks!” She was quoted in Women’s Wear Daily as saying, “They doctored and Photoshopped my body to make it look like I have already lost all the weight, which I have not.” (more…)

Cut Out Carb Confusion

berriesDid I trick you with the title? We’ve gotten so used to seeing “cut out carbs” in the last decade, you might think this post is about low-carb eating. Quite the contrary. People are often misled about carbohydrates and as a result don’t know where to place them in their eating plan, especially if they are dieting. If that sounds like you, read on because just in case you don’t know, carbs are necessary for health.

1. You need carbs. Our brains thrive on simple carbohydrates – glucose to be specific. That’s why the body breaks down carbs into glucose – so the brain can eat. So why in the world would you cut out carbs? Don’t do it. The problem people run into is that quality counts and they don’t always focus on quality when it comes to carb intake. I’ll cover that later on in this article.

2. Estimate your good carb range. The brain alone needs about 135 grams of carbohydrates a day, which you can easily get through healthy carbohydrate foods (more on that later). You then need carbs to help support your daily activities. The more active you are engaged in, the more carbs you need. Roughly, everyone fits into a 40-65% of calories range, with the exception of endurance athletes in a carbo load phase. If you’re trying to lose weight, calculate about 45%-50% carbs and go in that range. (more…)

Calcium – The Wonder Mineral

milkWhen I was a kid, I never developed a taste for milk. Well, no, that’s not strictly true – I loved CHOCOLATE milk. I never had it, so, consequently, I didn’t drink milk. I heard all of the horror stories that were linked to non consumption of milk – the broken bones, the osteoporosis later in life – but I chose to ignore all of them. I mean, really, who wants to think about the things that might happen fifty years in the future?

How Mario Batali is Losing Weight

mario bataliThere is yet another story of a celebrity chef losing weight after seeing themselves in the media. Although 49-year-old Mario Batali does want to look better, it’s not all vanity. He also says he wants to have a longer life with his family. Portion control and some light exercise have helped him lose 45 pounds thus far. His goal is to get down to 200, from the 280 pounds he weighed before he started this journey.

So how is Batali doing it when it is his job to surround himself with wonderful food all day long? He has made statements about caloric balance that suggest that he understands that food is the body’s fuel primarily, even though it can be enjoyed. Despite common weight loss advice, Mario is not eating breakfast, but finding energy in the morning from espresso. Throughout the day, he says that he tries to eat salads and vegetables, only adding protein in the evening. He states that he also eats only half portions when eating at restaurants. (more…)

Considering Haiti: Rethinking Eating Habits

haitian boyIt seems like Haiti is on everyone’s hearts and minds at the moment. Such events reach us at a level where we change behavior. I doubt that many of the people texting donations to the Red Cross had never sent a non-personal text message before; I wonder how many had never previously sent a text message. I know a six-year-old child who was doing extra chores to earn money to give to his school’s fundraiser. Big events impact our thinking and our priorities. In these cases, we are driven by compassion and concern. Sometimes it takes big events to break us out of focusing only on our own concerns and daily stressors.
