Asparagus Pasta Salad

Delicious pasta and colorful fresh vegetables.

Yield: Serves 8


  • 1 cup small shell pasta
  • 1/2 to 3/4 cup non-fat zesty Italian dressing
  • 1 1/2 cups asparagus, cut
  • 1 tsp. oregano
  • 1/2 cup carrots, sliced in thin coins
  • 1/4 cup diced sweet red bell pepper
  • 1/2 cup onion, diced
  • 1/2 tsp. celery seeds


  1. Cook pasta following package directions
  2. Rinse, drain and cool
  3. Add remaining ingredients
  4. Mix and marinate for six to eight hours or overnight

Is the asparagus raw?

This recipe is simple and yummy...as well as easy to pack for work! I used regular olive oil with some salt and pepper, which was a nice alternative as well!

Why do asparagus make my pee smell funny? I love them but cant stand it.
