Atkins Corned Beef and Cabbage

The low-carb version of this classic Irish dish.

6g Carbs/serving
Yield: Serves 4


  • 2 cans corned beef
  • 1 large head of cabbage
  • 1/2 medium onion
  • 1 Tbs. celery seeds
  • 1 Tbs. olive oil
  • Salt and pepper to taste


  1. Shred cabbage and chop onion
  2. Place both cabbage and onion in a pan with oil
  3. Let this cook for 2-3 minutes
  4. Add both cans of corned beef
  5. Mix well with cabbage and onion
  6. Cook until all meat and vegetables are thoroughly cooked
  7. Add celery seed, salt and pepper
  8. Serve immediately

I made it this past St. Patrick's day and everyone liked it. It was fairly easy to make as well.

I feel that you use the regular fresh cornedbeef verses the cans
