Baked Stuffed Shrimp

Stuffed with flavor, not calories.

Per Serving: 160 calories, 2 g fat, 22 g protein, 7 g carbohydrates, 3.5 g fiber, 162 mg cholesterol, 269 mg sodium
Yield: Serves 4

Ingredients

  • 3 whole green onions, minced
  • 2 cloves minced garlic
  • 2 Tbsp. parsley
  • 1 tsp. thyme or ¼ tsp dried thyme
  • 2 Tbs. sun-dried tomatoes, not in oil, cut into bits
  • 3/4 cup fresh bread crumbs
  • 1 Tbs. grated Parmesan cheese
  • 1 lb. large shrimp, peeled, deveined and butterflied
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 450 degrees F
  2. Saute onions, garlic, parsley and thyme in skillet, sprayed with nonstick cooking spray until onions become soft
  3. Lay shrimp in sprayed baking dish, cut side down, with tail shells pointing up
  4. Spread a layer of stuffing over the flattened portion of each shrimp, mounding it slightly in the center
  5. Bake until the shrimp are pink and the stuffing is well browned, about 10 to 12 minutes
  6. Garnish with lemon wedges if desired

Although I liked how my dish came out I felt the directions were not clear with how to make the stuffing to place on the shrimp and had to improvise on my own
