Beef and Bean Entree

A hearty Atkins diet dinner the entire family can enjoy.

Yield: Serves 5


  • 1 pound lean ground beef
  • 1 cup diced onion 
  • 1 can tomatoes with green chilies
  • 1 can black eye peas
  • 1/2 cup shredded cheddar cheese
  • Salt and Pepper to taste


  1. Brown ground beef and onions until cooked lightly
  2. Drain well and add everything but the cheese
  3. Reduce heat to low, cover and simmer 15 minutes
  4. Serve with cheese sprinkled over top
