Beef Minestrone

That irresistible favorite bowl of soup.

Yield: Serves 6


  • 1- 16 oz. can of chopped tomatoes, undrained
  • 1 large carrot, grated
  • 1/2 cup chopped cauliflower
  • 2 cubes beef bouillon
  • 1/2 lb. extra lean ground beef or turkey
  • minced garlic to taste


  1. In large pot, combine tomatoes, carrots, cauliflower and bouillon
  2. Bring to a boil
  3. Reduce heat and simmer
  4. In separate skillet, cook meat with garlic
  5. Drain fat from meat (pat with paper towels)
  6. Transfer meat to potHeat and serve
