Broccoli and Cauliflower Salad

Get your fiber from this tasty, veggie-packed salad.

Yield: Serves 1

Ingredients

  • 2 cups cherry tomatoes
  • Fresh broccoli florets
  • Fresh cauliflower florets
  • 1 small red onion, finely chopped
  • 2 green onions. finely chopped
  • 7 Tbs. fat-free mayonnaise
  • 4 Tbs. fat-free sour cream
  • Salt and pepper. to taste
  • 1/2 cup red wine vinegar
  • 25 packets Equal Sweetener

Instructions

  1. Quarter tomatoes
  2. Chop broccoli and cauliflower
  3. Mix all ingredients thoroughly and refrigerate 2-3 hours, stirring often to marinate
