Chicken Osso Buco Style

Chicken so special, you'll swear it was prepared by a restaurant.

Nutrition Facts: Carbohydrates 5.5g
Yield: Serves 4


  • 4 chicken breasts, skin and fat removed
  • 1 tsp. salt
  • 1/4 cup chopped onion
  • 1 large carrot
  • 1/2 cup celery
  • 1- 8 oz. Italian-style stewed tomatoes
  • 1 Tbs. chopped fresh parsley


  1. Spray skillet with cooking spray
  2. Over medium-high heat, add chicken and salt
  3. Cook until golden brown on both sides
  4. Transfer to bowl
  5. Meanwhile, cut onion and dice carrots and celery
  6. Add to skillet and cook on medium 10 minutes until lightly browned
  7. Return chicken to skillet; add tomatoes
  8. Heat to boiling over high heat
  9. Reduce heat to low
  10. Cover and simmer 25 minutes or until juices run clear when chicken is pierced

This dish actually had a lot of flavor. I will definitely make this again.
