Chicken Stuffed with Sun Dried Tomatoes

Flavor is bursting out of this chicken stuffed with tomatoes.

  • 1/4 cup oil-packed sundried tomatoes
  • 1 tsp. basil
  • 1/4 cup Parmesan cheese
  • 4 chicken breast halves


  1. Preheat oven to 425º F
  2. Chop tomatoes and mix with basil, Parmesan
  3. Salt and pepper to taste
  4. Cut a pocket into each chicken breast
  5. Stuff with tomato mixture
  6. Sprinkle with salt and pepper
  7. Bake 35-40 minutes
