Chicken with Olives

Chicken paired with olives and lots of flavor.

  • 2 lbs. boneless chicken, cut up
  • salt
  • 1/2 cup chopped onion
  • 1 cup chicken broth
  • 4 Tbs. sliced olives
  • 1 tsp. fresh thyme, chopped


  1. Heat olive oil in skillet
  2. Add chicken and sprinkle with salt
  3. Cook until light brown and remove
  4. Add onions to skillet and cook until translucent
  5. Add broth, olives, thyme and chicken
  6. Reduce heat; cover and simmer 20-25 minutes
