Chocolate Ice Cream

Classic chocolate ice cream

  • 2 oz unsweetened chocolate
  • 1/4 cup unsweetened cocoa powder
  • 2 eggs
  • 1 cup Splenda
  • 2 cups whipping cream
  • 1/2 cup water
  • 1 tsp. vanilla extract
  • Ice cream maker


  1. Melt the unsweetened chocolate on top of a double boiler over hot water
  2. Gradually whisk in the cocoa and heat, stirring constantly, until smooth
  3. Whisk in the cream and water
  4. Combine well & remove from heat
  5. In a bowl, whisk the eggs until light and fluffy, 1 to 2 minutes
  6. Whisk in the Splenda until blended, about 1 minute more
  7. Pour into the cream and vanilla and whisk to blend
  8. Pour the chocolate mixture into the cream mixture and blend
  9. Cover and refrigerate until cold
  10. Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions
