Chocolate Mint Pie

A minty cool end to a delicious dinner.

  • 9-inch graham cracker crust
  • 10 oz. fudge mint cookies, crushed
  • 6 Tbs. hot water
  • 6 oz. reduced-fat cream cheese
  • 1/2 cup granulated sugar
  • 1 Tbs. milk
  • 1/2 tsp. peppermint extract
  • 8 oz. non-dairy whipped topping
  • 1/2 tsp. vanilla extract
  • 6 to 10 drops green food coloring
  • Fresh mint leaves, if desired


  1. Mix crushed cookies and hot water
  2. Spoon into graham cracker crust and gently spread to cover bottom
  3. Beat cream cheese until smooth
  4. Gradually beat in sugar, milk and peppermint extract
  5. Mix vanilla extract into whipped topping and fold into cream cheese mixture until smooth
  6. Stir in food coloring and spoon into crust, spreading evenly
  7. Refrigerate overnight
  8. Garnish with fresh mint leaves, if desired, before serving
