Chocolate Peanut Butter Fudge

As good as grandma's... but don't tell her.

Ingredients

  • Cooking spray
  • 1- 14oz. can fat-free sweetened condensed skim milk
  • 1- 12oz. package reduced fat semisweet chocolate chips
  • 1/3 cup reduced-fat chunky peanut butter
  • 1 Tbs. light-colored corn syrup
  • 1 tsp. vanilla extract

Instructions

  1. Line an 8-inch square baking pan with foil, and coat foil with cooking spray
  2. Set aside
  3. Combine milk and next 3 ingredients in a medium saucepan
  4. Cook over low heat until chocolate melts, stirring frequently
  5. Remove from heat
  6. Stir in vanilla extract
  7. Pour chocolate mixture into prepared pan, spreading evenly
  8. Chill at least 2 hours
  9. Lift foil from pan, and turn fudge out onto a cutting board
  10. Cut into 36 squares
  11. Store between layers of wax paper in an airtight container in refrigerator
