  • 1 cup yellow whole grain cornmeal
  • 1 cup all purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/3 cup vegetable oil
  • 1/4 cup egg substitute or egg white
  • 1 cup skim milk


  1. Preheat oven to 375 degrees. Lightly oil an 8x8 inch baking pan.

  2. Combine dry ingredients in medium-sized mixing bowl. Add wet ingredients and mix well. Pour batter into pan.

  3. Bake until done, about 30 minutes. Allow to cool then cut into 6 squares.
