Crispy Fried Chicken

This recipe for fried chicken is crispy and juicy.

Yield: Serves 8


  • 1 1/2 cups all-purpose flour
  • 1 tsp. black pepper
  • 1 tsp. poultry seasoning
  • 1 tsp. chicken soup base
  • 1 tsp. paprika
  • 1/4 tsp. red cayenne pepper
  • 2 whole chickens cut into serving pieces
  • 2 tsp. seasoning salt
  • 1/3 cup olive oil


  1. In a large plastic or brown bag, combine first six ingredients
  2. Sprinkle chicken pieces on all sides with seasoning salt
  3. Shake in the seasoned flour and lay on wax paper while oil is heating
  4. In a 12-inch skillet, heat oil and butter over medium-high heat until hot
  5. Carefully add chicken, skin side down
  6. Cook until golden brown, about 10 to 15 minutes per side
  7. Drain on paper towels
  8. For the crispiest chicken, use a cast iron skillet
