Crock Pot Sweet and Sour Pork

Slow cook your way to this savory Asian dish.

Ingredients

  • 1 1/2 pounds lean, boneless pork loins, cut into cubes
  • 8 oz. canned pineapple chunks in unsweetened juice, undrained
  • 1 medium red or green bell pepper, cut into squares
  • 3 Tbs. brown sugar
  • 1/2 tsp. ginger
  • 1/4 cup vinegar
  • 3 Tbs. soy sauce
  • 3 Tbs. water
  • 2 Tbs. cornstarch
  • 2 cups cooked rice

Instructions

  1. In 3 1/2- to 4-quart Crock Pot, combine pork, pineapple, bell pepper, brown sugar, ginger, vinegar and soy sauce
  2. Mix well
  3. Cover and cook on low setting for 6 to 8 hours
  4. About 5 minutes before serving, in small bowl, combine 3 Tbs. water and cornstarch; blend well
  5. Stir into pork mixture in Crock Pot
  6. Cover again and cook on high setting for an additional 5 minutes or until thickened
  7. Serve pork mixture over rice
  8. Prepare rice 25 minutes before serving

I like going Crock Pot style cooking because I work nights and when I wake up from my sleep I already have a meal ready for my family. Great idea!
