Crockpot Corned Beef and Cabbage

A St. Patty's day classic.

Yield: Serves 10

Ingredients

  • 3 pounds corned beef
  • 1/2 cup water
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 Bay leaves
  • 1 Head cabbage (about 2 pounds), cut into 8 wedges

Instructions

  1. Place corned beef in Crock Pot
  2. Add water, onion, garlic and bay leaves
  3. Cover, and cook on Low for 10 to 12 hours (overnight is good)
  4. About two hours before its finished, add in the cabbage and let continue to cook
  5. After two hours, serve dish hot

I love corned beef and cabbage and I'd love to try the recipe but everything I've read says corned beef is high in cholesterol, fat, calories and sodium. The old me wouldn't have been concerned but the NEW me cares about those things. I would like to see more nutritional info for this before I make decisions on it.
