Delicious Lentil Salad

This healthy, high-protein salad is perfect for vegetarians.

Yield: Serves 6


  • 16 oz. dried lentils
  • 3 Tbsp. sundried tomatoes in oil, plus oil from jar
  • 4 finely chopped green onions
  • 1/2 each finely diced red, yellow, orange and green peppers
  • 1 cup fresh parsley, finely chopped
  • 1 tsp. cumin
  • 1/2 lemon, juiced
  • salt and pepper to taste


  1. Prepare lentils.
  2. Combine all ingredients together

I have a kidney problem, and can't eat alot of protein. Any suggestions?
