Diabetic Veal Scallopini

Scallopini is always tender. Suitable for Diabetics!

252 calories per serving
Yield: Serves 6


  • 1 1/2 lbs. veal, round or loin (may substitute Pork Cutlets, pounded thin)
  • 2 TBS flour
  • 1 1/2 tsp. seasoned salt
  • Dash pepper
  • 1 TBS butter
  • 2 c. sliced, fresh mushrooms
  • 1/4 c. beef broth
  • 2 TBS dry sherry


  1. Trim meat well and cut into 6 pieces
  2. Combine flour, salt, and pepper; sprinkle onto both sides of veal
  3. Melt butter in non-stick skillet; add meat and brown quickly on either side; transfer to hot serving platter to keep warm
  4. Add mushrooms and saute about 5 minutes
  5. Add beef broth and sherry, scraping pan as the liquids deglaze
  6. Cook over high heat for about 1 minute until bubbling hot. Serve over veal
  7. For a professional touch, add 2 TBS of Tomato paste with Step 5, and add chopped carrots, celery and onion to Step 4
