Easy Baked Fish for One

Suitable for Diabetics and Low-Salt, Low-Fat Diners

Yield: Makes 1 filet


  • Any fish fillet
  • 1/4 c. margarine
  • 2 c. dry bread crumbs or panko crumbs (Japanese bread crumbs)
  • 1 TBS lemon juice
  • 1/4 tsp. freshly ground pepper
  • 1/4 tsp. basil


  1. Melt margarine add lemon juice, pepper and basil
  2. Dip fillets in mixture and then in dry bread crumbs
  3. Lay in one layer in greased pan
  4. Bake at 400 degrees for 15 minutes or until done
  5. Good for no salt, low cholesterol diet
  6. For a professional touch, garnish with chopped fresh herbs and lemon slices
