Fennel and Clam Soup

A hearty and healthy soup created by Biggest Loser's Curtis Stone.

Per Serving: 220 Calories, 5g Fat, .5g Saturated Fat, 25mg Cholesterol, 820mg Sodium, 24g Carbohydrates, 6g Fiber, 6g Sugar, 12g Protein
Yield: Serves 4

Ingredients

  • 2 pounds clams, scrubbed and washed
  • ½ cup dry white wine
  • 1 tablespoon olive oil
  • 1 onion, medium diced
  • 2 medium fennel bulbs, medium diced
  • 1 leek (white part only), medium diced
  • 2 celery sticks, medium diced
  • 1 clove garlic, chopped fine
  • ¼ cup white wine
  • 1.5 quarts vegetable stock

Instructions

  1. Heat a large sauce pot over high heat. Add the clams and stir for 15 seconds, then add the ½ cup white wine and cover pot with lid allowing clams to steam for 1 minute.

  2. Remove the pot from the heat and pour the clams into a colander set over a bowl. Allow the clams to cool and remove the clams from their shells. Reserve the clams and their juices separately.

  3. Heat a large sauce pot over medium high heat. Add the olive oil and sweat the onion for 1 minute stirring constantly. Stir in the fennel, leek and celery and cook for 2 minutes. Add the garlic and cook for a further 1 minute. Stir in the ¼ cup of white wine and cook for about 15 seconds before adding the vegetable stock and the juices from the clams.

  4. Once the soup comes to the simmer, reduce heat to low and gently simmer for 10 to 15 minutes or until the broth has thickened slightly. Stir in the reserved clams and season with freshly ground black pepper. Ladle the hot soup into bowls and serve immediately.

I never thought or really cared about the health effects this would have on me, back then. A year ago after a successful weight loss plan, now at 120 pounds, it is a major difference. I've lost 30 pounds in the first month. The most significant change in my life is the amount of energy I now have and the way my clothes fit loosely. Everyone close to me and people I haven?t seen in a while are amazed and tell me that I look really good. This is a life changing experience for me although at first I was skeptical about the weight loss plan. Our own metabolism system play a vital part in controlling the amount of body fat burned in the process of providing energy to the body. Knowledge about our own metabolism function is the mother to all weight loss programs. With the knowledge you not only reduce your weight but able to maintain an ideal weight and living a healthy life.The weight loss program has proven to be effective in the short and long-term, without need to endure starvation and without any daily athletic workout. Really great recipe, tasty! I did add extra leeks because where I bought them they came in bunches of 3. Only had 1 pound of clams, still good! Easy to make as well.
