Hunan Style Pork

A delicous stir-fry favorite.

Ingredients

  • 1/2 pound boneless pork loin
  • 1 Tbs. plus 4 tsp. cornstarch, divided
  • 3 Tbs. soy sauce, divided
  • 1/2 tsp. granulated sugar
  • 1 clove garlic, minced
  • 1/4 tsp. crushed red pepper
  • 1 pound fresh broccoli, trimmed
  • 2 Tbs. vegetable oil, divided
  • 1 Tbs. slivered fresh ginger root
  • 1 onion, chunked and separated
  • 10 cherry tomatoes, halved
  • Hot cooked rice

Instructions

  1. Cut pork across grain into thin slices; coat with mixture of 1 Tbs. each cornstarch and soy sauce, sugar and garlic
  2. Let stand 10 minutes
  3. Meanwhile, combine remaining 4 tsp. cornstarch and 2 Tbs. soy sauce with red pepper and 1 1/4 cups water
  4. Cut broccoli into bite-size florets and stems into thin slices
  5. Heat 1 Tbs. oil in hot wok or large skillet over high heat
  6. Add pork and stir-fry 2 minutes; remove
  7. Heat remaining 1 Tbs. oil in same pan
  8. Add ginger; stir-fry 30 seconds
  9. Add onion and broccoli; stir-fry 4 minutes
  10. Stir in pork, tomatoes and soy sauce mixture; cook, stirring, until sauce boils and thickens
  11. Serve over rice

This is a great recipes but I prefer it with chicken. Pork tends to be too fatty for me.
