Yield: Serves 6. Each serving: 1-1/4 cups.

8 oz fettucini, dry
1 large onion, peeled and sliced
3 cups sliced mushrooms
1 green bell pepper
2 celery stalks, sliced
2 Tbsp light soy sauce
2 cups veggie burger crumbles
1/2 cup no-added-salt tomato sauce
1/2 cup ketchup
1 tsp paprika
1 tsp caraway seeds
1 tsp garlic powder
1/2 tsp black pepper to taste

Cook pasta according to package directions. Drain and set aside in a colander until ready to serve.

Lightly spray a large, non-stick skillet and heat over medium high hat. Saute the onion, mushrooms, bell pepper and celery. Stir in soy sauce, burger crumbles, tomato sauce, ketchup, seasonings and 1/4 cup water. Cover and simmer 5 to 8 minutes. Serve over pasta.
