Italian Style Lentils and Rice

2 teaspoons olive oil
2 cups chopped onion
1 cup dry lentils, rinsed
1 cup brown rice
4 cups boiling water
6 cups dark green salad mix
2 tomatoes, cored and diced
1/2 cucumber, diced
1/4 cup fat free Italian salad dressing

Heat olive oil in a large pot over medium heat. Add the onions and cook, stirring occasionally, until they are soft and begin to brown. This will take about 10 minutes. Add the lentils, rice and boiling water. Bring to a simmer, then cover and cook over medium heat until the lentils and rice are tender, about 20 minutes. Stir occasionally and add additional water if needed.

Mix the lettuce, tomatoes and cucumber in a large bowl. Toss with the dressing.

Place a portion of lentil mixture on each plate and serve with a generous serving of salad.
